I love to eat them in Hot Dog Buns.
Perfect for picnics.
Eat them cold in a bun for Easter Weekend lunch-
Eat them warm for a game day appetizer!
I love to eat potato salad as a side.
Such comfort food!
1½ pounds of ground beef
¾ cup of milk
1 cup of quick oats
½ cup of chopped onion
1 egg
1 teaspoon of salt
1 Tablespoon of chili powder
¼ teaspoon of pepper
¼ teaspoon of garlic powder
Mix meat ball ingredients all together.
Form meat into the size of golf balls, and place on a cookie sheet and for 30 minutes at 350°.
While the meatballs are cooking, make the sauce.
2 cups of ketchup
¾ cup of brown sugar
2 Tablespoons of Liquid Smoke
½ cup of chopped onion
½ teaspoon of garlic powder
Mix the sauce ingredients together in the crockpot while the meatballs are cooking.
Add the meatballs from the oven to the crockpot and coat with the sauce.
Simmer on low for 1 hour.
Serve in a hotdog bun or individually

They are better the next day!
3 red potatoes per person
1 egg per person
and a stalk of celery per person
mayonnaise
Cut the red potatoes in quarters and put into a pot.
Cover potatoes with water and boil until the potatoes are tender.
Make hard boiled eggs, peel and slice.
Chop celery into slices. (My children do not like pickles, yet I love the crunch celery adds, and the color)
Once the potatoes are tender. Drain the water. Put the potatoes in a bowl.
Add the eggs, celery, and mayonnaise. Mayonnaise is up to your liking. I like a lot.
The mayonnaise absorbs into the potatoes when they are warm, so it takes a bit more.
Stir together.
Refrigerate, or serve warm!
