Coconut Oatmeal Cookies by Tiffany

The other day while concocting a new recipe for you, I wanted to bring something this week that disappeared very quickly in my home. I almost wasn’t able to catch a picture, that’s how quick these babies disappeared. I have since had numerous requests to make them again. This is a great recipe to use on that stock pile you have of oats.  If you’re a coconut lover like myself, switch up the vanilla extract with coconut extract to give them that extra coconut taste. I hope you enjoy them as much as we did!

Yields approx. 2 dozen

 Ingredients

  • 1/2 cup butter, salted
  • 1/2 cup Crisco
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups all-purpose flour
  • 2 cups old fashioned oats
  • 1 1/2 cups sweetened coconut flakes

Directions

Preheat oven 350 degrees F.

1. In a standing mixer beat butter, Crisco, sugars and vanilla until light and fluffy. (About 8 minutes) Next beat in eggs.

2. In a medium sized bowl, whisk flour, cinnamon, and baking soda together; add to creamed mixture. Next stir in oats and coconut.

3. Shape cookie dough into 1 inch balls and place 2 inches apart on a large baking sheet. Place on the middle rack in oven and bake for 10 minutes. Remove from oven and let cookies set on baking sheet for 1-2 minutes before transferring to a cooling rack.

Notes: Store cooled cookies in a covered container, sealed bag or cookie jar. If freezing store in freezer safe bags, covered dishware, such as Pyrex brand.

Cookie Tip:

When I’m feeling like a super woman, and this isn’t to often, I might add. I make several batches of different kinds of cookie dough, roll into 1 inch balls and lay on a large baking sheet to freeze. I then take the frozen cookie dough balls and transfer them to gallon sized freezer bags. When we feel like cookies and I don’t feel like making them, all I do is preheat the oven and pop in the amount of frozen cookie dough that I need and voila’, cookies in no time flat!

I love it when there are tons of apples to pick from to eat! Some of my favorites are Gala, a good Fuji and my top favorite is a sweet and cold Honey Crisp apple! Throwing some Crisp Apple Pizza Bites in for a quick lunch makes for some refreshing and healthy lunch ideas.

Crisp Apple Pizza Bites ~ Healthy Lunch Ideas

I am always looking for new healthy lunch ideas that are both easy and taste good.  My kids love anything to do with pizza, and these Crisp Apple Pizza Bites are one of their favorite snacks. Perfect for little hands and fun for them to make too. You can change the recipe to fit your families personal favorites but here is what we like to put on ours.

  • 1 Pink Lady apple, cored and cut into slices
  • peanut butter
  • granola
  • craisins ( dried cranberries)
  • pumpkin seeds (without the shell)
  • chocolate chips
  • Honey (optional)
Spread the peanut butter (also amazing with Almond butter) on each slice then sprinkle the toppings. Drizzle some honey for extra sweetness!  I hope you enjoy this recipe as much as my family does!

How to make your own homemade SNOW CONES, DIY Shaved Ice just like the snow cone shack at home, great for parties

Last year I rented a snow cone machine for a big party I was doing.  I rented it for 2 days and after the rental cost and the supplies to go with it, it cost me over $100.  The kids loved it, but it was really expensive and did not really work that well. It ended up giving us crushed or chunky ice NOT SHAVED ice. This year I decided to look at how much it would be to just purchase my own machine instead of renting one year after year. There are LOTS of snow cone or shaved ice machines for sale, you can find a huge list here.  But not all of them work the same so it is hard to know which ones are worth the money.

My friend Rachelle just bought this  Zeny® Ice Shaver Machine  for her kids, and I asked her if I could see how well it worked. You just load it with ice cubes and a rotating blade shaves it and you get nice fluffy ice on the tray down below. I think if you froze ice in a cup and put a solid ice chunk in the machine it would make more consistent shaved ice. Since the ice would stay in contact with the blade. You can see how it worked in the video below.  Still not 100% like the shaved ice shack, but WAY better than the machine I rented last year. I also really like that it will not turn on till the handle is DOWN, so less chance of you getting hurt with a sharp spinning blade.

You can buy snow cone syrups and cups for them online, or you can use Torani syrup. You can find it at most stores but only in a few flavors, our local Cash and Carry  restaurant supply store has a HUGE selection at good prices.  So you might check local restaurant supply stores for the best deal.

baked steak fries recipe

Did you know you can make Baked Steak Fries that are both healthy and budget friendly.  All you need is McCormick Season All, Olive Oil and potatoes.

Take 3 potatoes wash them,  and cut them into wedges. Put them into a bowl, add 1 Table Spoon of oil. Mix well till coated, then sprinkle them with Season All, as little or as much as you would like.
Spread them on a baking sheet or stone and bake them at 350 degrees for 20 mins, turn wedges over and bake another 10-15 mins.This is a great side dish, My kids love them!
