For the recipe you will need
- 2-4 small zucchini
- 2 eggs
- 1/4 cup milk
- Progresso bread crumbs
- Salt and Pepper
- Garlic powder
- 2 tablespoons olive olive (to grease the pan)
Wash the zucchini and cut into quarters. I normally get about 8 spears from each zucchini. Put in a bowl and season with salt, pepper and a light sprinkle of garlic powder. Pour the egg and milk mixture over the top till well coated.
Then take the zucchini spears from the egg wash and roll them in Progresso Italian Seasoned bread crumbs.
Place them on a greased baking sheet. Bake them at 425 degrees for 25-35 minutes till tender.
Baking time will vary on oven, and size of the spears. Enjoy!
