Brown Sugar Glazed Carrots

I will admit cooked carrots made me gag when I was little, and still as an adult that are not something I enjoyed….. that is till I tried this recipe. Now my whole family loves them, and we gobble up a whole pound of fresh carrots for dinner.

You will need:

  • 1 lb of fresh carrots
  • 3 tablespoons butter
  • 4 tablespoons brown sugar
  • salt and pepper

Peel and chop your carrots to desired size.  I do smaller  bite size for my kids, plus they cook quicker.

Add to a pot, and cover with just enough water to cover the top.  Bring to a boil, cover with a lid and reduce heat to a simmer.  Cook still fork tender or till water is gone.  Watch them close so you do not burn them, or run totally out of water.  It normally takes mine  about 6-9 minutes to cook. Depends on how big they are, and how many I am cooking.

You could also steam them if you want, they just need to be cooked till tender.

Once they are cooked, drain any remaining water from the pot.  Add butter and brown sugar, turn heat back on to medium.

Stir till butter and brown sugar dissolve.  It will start to thicken with heat, and create a glaze ( take 2-3 min is all)  Salt and pepper to taste, and enjoy!
