Salad In A Jar Recipes ~ Easy Healthy Lunch On the Go Ideas

I love a good salad. Sure I could go to the store and scoop out my salad and pay by the weight, but a healthy salad in a jar makes for a healthy and cheap lunch on the go!

Salad In A Jar Recipe, Mason Jar Salad ideas, Easy meal prep for lunch on the go, Healthy Recipe made easy with these Salad Ingredients ready for a healthy meal

As you know, these little salads are great for work, going to the beach, a picnic..etc… Add anything you want to it. I’m sure you realize that no matter how you decide to make your salad in a jar, always add the dressing first (so it stays in the bottom of your jar) and after that either put some grain/seed type of food over it (such as Quinoa or beans) and stack your veggies – then when you’re ready to eat shake the jar!  A Mason Jar works great for this, I like the wide mouth jars best. Make sure you check out our list of over 18 salad ideas below.

So in one of them there’s:

Chickpeas
Cucumbers
Cherry Tomatoes
Shredded Carrots
Tuna (f you do not like tuna add grilled chicken)
Hard Boiled eggs
Spring Lettuce
If you find the jar is hard to eat out of, or you need something that is NOT breakable these are some other great options. Same concept for easy meal prep with healthy ingredients to make a salad on the go.

French Bread Pizza ~ Easy Make Ahead Camping Recipe

When I go camping I like to have easy meals, but I also like to have warm hearty meals that will fill my kids tummies.  I love camping recipes that can be prepped and made ahead of time, this is one of our families favorite campfire recipes. These french bread pizzas can be made before you even leave for your trip, I like to then freeze them. Keep them in the cooler and then when you are ready to cook them toss them right on the coals of the fire to cook.

camping menu recipe ideas, french bread pizza made on the campfire, camping hacks, dinner ideas for outdoor cookingTo make this recipe you will need:

  • French Bread (or mini french bread loaves)
  • Softened cream cheese
  • Grated Mozzarella Cheese
  • Pizza or marinara sauce
  • Pizza toppings ( pepperoni, canadian bacon, olives, pineapple, mushrooms, bell peppers, sausage)
  • Aluminum Foil (heavy duty)
  • Gallon sized ziploc bags (to store them in)

camping menu recipe ideas, french bread pizza made on the campfire, camping hacks, dinner ideas for outdoor cookingCut your french bread in half, spread a thin layer of softened cream cheese on the top and bottom side. Spread a thin layer of pizza sauce on top of the cream cheese. Layer your pizza toppings and cheese, add the top back on your french bread. Wrap with heavy duty foil, I like to make sure it is wrapped at least two times. This helps it heat more even and avoid being burned.

Easy Camping Recipes ~ French Bread Pizza

I store these in a large gallon ziploc bag, since ice in coolers often melt and leak. The ziploc back will help keep them dry until you are ready to cook them. I then put them in the freezer,  before the ice chest orcooler to help keep them cool on your trip.  Make sure they are thawed before you put them on the fire to cook. It is best to put them on the coals of the fire (instead of the flames). Turn them a few times to help them cook evenly, about 5-8 minutes on the fire and you should have a hot and yummy french bread pizza!

No Knead Bread Recipe, Butter Roll recipe, Easy Dinner Rolls made from scratch, how to make dinner rolls, how to shape crescent rollsNo Knead Bread Dinner Roll Recipe – My Thrifty Roll Recipe

Printable Recipe Card below
I know that there are thousands of bread recipes.  But  I love this recipe, it is quick easy and so far fail proof.  I have made it hundreds of times and they always turn out,  so in my book it is a keeper! I also like it because you do not have to knead the dough.  I have a lot of problems with pain in my wrists, so it works best for me.  My girls and I love cooking together, some times it would be faster or less messy without their help…. but I feel it is best to let them help while they are still eager to learn.

IMG_1894

In large bowl add

  • 2 cups warm water ( if it is too hot or too cold…you will kill the yeast.  So make sure it is warm)
  • 2 TBS yeast
  • 1/2 cup sugar

Give it a few minutes in the bowl, to make sure your yeast is working.

IMG_1898

Then add:

  • 3 eggs whipped lightly
  • 3/4 cup melted butter
  • 1 teaspoon salt
  • Sometimes I add 1/2 cup of apple sauce to make them extra moist, in place of part of the butter.

Mix well….

IMG_1903

Start to whisk in the flour one cup at a time ( for a total of 6 cups) you will also need 1/2- 1 cup  when you shape the rolls.

IMG_1906

You will need to switch over to a spoon to mix with,  on about cup 4 of flour.

IMG_1910

Dough WILL be sticky, scrap down the sides of the bowl and cover with plastic wrap or a towel…I use both.

IMG_1912

Set aside in a warm place, (like a sunny window seat) and allow to raise.  Till doubled in size. ( if you are in a hurry let rise 20 mins other wise let it rise 60 mins).  Works best to wait the full 60 mins.

IMG_1915

Take off the plastic wrap, punch down to get the air out.  You will need to dust with flour.

IMG_1919

Take out HALF the dough, spread on floured counter top. With your hands make  into a circle.  Keep dusting with flour so it is easy to work with. ( do the same with the other half of dough) I have found it is just easier to work with only half at a time.

IMG_1920

Cut into wedges, and roll up in to crescent roll shape.  Or you can just make balls  in the shape of dinner rolls.

IMG_1921

Place them on a greased pan, Bake 400 degrees 10-12 mins

IMG_1924

Once cooked, brush a bit of butter on top to give them a nice shine.  Take off baking sheet, cool on cooling rack.

Last but not least enjoy!

ham and cheese sliders recipe

Ham and Cheese Sliders Recipe – Make the Night Before – Quick and Easy

We love this recipe! We recently made them at the beach! Its so easy, you just make them the night before. Let the soak and then cook them for lunch the next day! So so so good. It’s one of the easiest and best recipes around!

You will need

  • 2 dozen rolls (sliced in half)
  • 1 lb Swiss Cheese sliced
  • 2 Lbs sliced Ham

Sauce:

  • 1 Cup Butter melted
  • 4 Tablespoons Brown Sugar
  • 2 Tablespoons Poppy Seeds
  • 1 Tablespoon dry mustard
  • 1 Tablespoon Worcestershire Sauce

It will  be a recipe we make again, for sure!

Slice rolls in half, and add ham and Cheese.  Then put top back on. Place them on a large baking sheet. I had to use 2 cookie sheets.

Mix sauce in bowl, and stir to help dissolve sugar.

Brush sauce liberally on top of each roll, Drizzle any extra over the top.

Cover, and place in the refrigerator overnight.

Bake the next morning at 325 degrees, for 25 minutes COVERED with foil.

Then remove foil and bake 5-10 minutes longer.
