I love a good salad. Sure I could go to the store and scoop out my salad and pay by the weight, but a healthy salad in a jar makes for a healthy and cheap lunch on the go!

As you know, these little salads are great for work, going to the beach, a picnic..etc… Add anything you want to it. I’m sure you realize that no matter how you decide to make your salad in a jar, always add the dressing first (so it stays in the bottom of your jar) and after that either put some grain/seed type of food over it (such as Quinoa or beans) and stack your veggies – then when you’re ready to eat shake the jar!  A Mason Jar works great for this, I like the wide mouth jars best. IMG_1929I know that there are thousands of bread recipes.  But  I love this recipe, it is quick easy and so far fail proof.  I have made it hundreds of times and they always turn out,  so in my book it is a keeper! I also like it because you do not have to knead the dough.  I have a lot of problems with pain in my wrists, so it works best for me.  My girls and I love cooking together, some times it would be faster or less messy without their help…. but I feel it is best to let them help while they are still eager to learn.

In large bowl add

  • 2 cups warm water ( if it is too hot or too cold…you will kill the yeast.  So make sure it is warm)
  • 2 TBS yeast
  • 1/2 cup sugar

Give it a few minutes in the bowl, to make sure your yeast is working.

Then add:

  • 3 eggs whipped lightly
  • 3/4 cup melted butter
  • 1 teaspoon salt
  • Sometimes I add 1/2 cup of apple sauce to make them extra moist, in place of part of the butter.

Mix well….

Start to whisk in the flour one cup at a time ( for a total of 6 cups) you will also need 1/2- 1 cup  when you shape the rolls.

You will need to switch over to a spoon to mix with,  on about cup 4 of flour.

Dough WILL be sticky, scrap down the sides of the bowl and cover with plastic wrap or a towel…I use both.

Set aside in a warm place, (like a sunny window seat) and allow to raise.  Till doubled in size. ( if you are in a hurry let rise 20 mins other wise let it rise 60 mins).  Works best to wait the full 60 mins.

Take off the plastic wrap, punch down to get the air out.  You will need to dust with flour.

Take out HALF the dough, spread on floured counter top. With your hands make  into a circle.  Keep dusting with flour so it is easy to work with. ( do the same with the other half of dough) I have found it is just easier to work with only half at a time.

Cut into wedges, and roll up in to crescent roll shape.  Or you can just make balls  in the shape of dinner rolls.

Place them on a greased pan, Bake 400 degrees 10-12 mins

Once cooked, brush a bit of butter on top to give them a nice shine.  Take off baking sheet, cool on cooling rack.

No Knead bread dinner rolls. Super easy to make and you can use normal All Purpose Flour or Bread Flour too.
Cuisine: American
Serves: 32 dinner rolls
Ingredients

  • ¾ cup melted butter (or do ½ cup butter and ½ cup apple sauce)
  • 1 teaspoon salt
  • 6 cups All Purpose or Bread flour works, may need more or less depending on dough.
  • ½-1 cup flour to use when you shape the dinner rolls before you bake them

This is a fun recipe we made a while back that is a great way to use leftover chicken! We love making this for a quick lunch, appetizer or just as a snack!

 

BBQ Chicken Potato Bake recipe

You will need

  • 5-7 medium potatoes washed and sliced
  • 1/4-1/2 cup of your favorite BBQ sauce (can substitute salsa or alfredo if you don’t like BBQ)
  • 2-3  cups cooked chicken diced
  • 2 cups grated cheddar cheese
  • 3 green onions chopped
  • dash of oil to coat the potatoes so they don’t stick while cooking
  • Salt and pepper
Bake Time 30-50 minutes depending on oven and thickness of your potatoes

Wash you potatoes and slice in  thin layers about 1/8- 1/4 of an inch. Thinner you cut them the quicker they will cook.  Put a thin layer of olive oil on a cookie sheet and toss potato slices in it so they get an nice even coating.  Season with salt and pepper.  Place in the oven at 350 degrees for about 30 minutes or till they are fork tender.

Take out of the oven and top with cooked chicken, BBQ sauce, cheese and green onions.

Then put BACK IN THE OVEN at 350 degrees just till cheese it melted (normally about 5 minutes)

My kids love this!  If your little ones do not like BBQ sauce you can use salsa or alfredo sauce instead…yummy!

Rich and Hearty Fettuccine Pasta and Meatballs Slow Cooker Recipe

Cooking time 4-5 hours in a slow cooker or crockpot

Start with the meatballs:

1/2 lb ground beef 97% lean
1/2 lb Italian sausage
1/2 tablespoon Italian seasoning
1 clove garlic minced
salt and pepper (pinch)

In a mixing bowl mix together ground beef, sausage, seasoning and garlic.  Form into one inch balls, and place in the bottom of your crock pot. I like to form my balls with a small scoop makes them all the same size and quick and easy.  Once you have all the balls on the bottom of the slowcooker, sprinkle diced onions on top.  Cover with a lid and cook on high for 2 1/2 hours.  They will be cooked through at this point and hold their shape till the end of the cooking process. On top of the cooked meatballs add, 1 16 oz box of dry fettuccine pasta.  You can leave the pasta long but I break mine up so it fits easier.  Pour in 4 cups hot water,  and 1 24oz jar of spaghetti sauce.  Make sure all the noodles are under the liquid. Place lid back on top of crock pot and cook for 1 – 2  hours.  It depends on how well you like your pasta done.   The longer it cooks the less sauce there will be and the softer the noodles.  Check it every half hour or so, give it a little stir and watch the magic of crock pot pasta happen.  It is so good your family will be asking for seconds.  Top with Italian cheese and enjoy.Rich and Hearty Fettuccine Pasta and Meatballs Slow Cooker Recipe ~ Crockpot Pasta recipe

TIP ~ If you were to use a thinner pasta like spaghetti or angle hair your cooking time would be MUCH shorter, like 30- hour instead.
