CHICKEN LETTUCE WRAPS 15 Minute Recipe

I admit I had never had a lettuce wrap till a few years ago.  My friends kept telling me how awesome they were, but I love egg roll wrappers or taco shells… so I saw no need to wrap something in just lettuce. I really thought it was just part of the healthy recipe movement and you would be sacrificing flavor.

Easy Chicken Lettuce Wrap recipe

I am here to tell you I was wrong, yes so very very wrong. This Chicken Lettuce Wraps 15 Minute Recipe is a packed full of flavor. The sweet butter lettuce is crisp and refreshing and the perfect way to serve  Chicken Lettuce Wraps. Hope you enjoy this recipe as much as we do!

What you need to make this recipe:

  • 1 lb ground chicken (or turkey)
  • 1 cup chopped onion
  • 1/2 teaspoon garlic powder
  • Pinch of black pepper
  • 1 tablespoon fresh ginger
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons soy sauce
  • 3 tablespoons black bean garlic paste
  • 8oz can water chestnuts (drain and chop)
  • 2 heads of butter lettuce
  • 3 green onions chopped
  • Sriracha  sauce

Directions

Start off by spraying a little bit of nonstick spray into the bottom of a large sauce pan. Add  ground chicken, chopped onions, garlic powder and pepper to the pan. Use a spatula to  break up the chicken into similar sized pieces and to help it cook even.   The chicken does not take that long to cook normally about 6-9 minutes (depending on cooking temp).

Once your chicken is cooked you can now add, ginger, rice wine vinegar, soy sauce, black bean paste, and water chestnuts. Stir well till chicken is well coated, turn heat down to medium/ low and allow to simmer for another 2-3 minutes. If you do not like the crunch of a green onion you can add them at this point to soften them up a little. Or you can just use them for garnish right before serving them.

Preperation

Wash your butter lettuce and pat dry with a clean towel.  To serve use the butter lettuce leaves as a “taco shell” to wrap around your chicken mixture. This is why they are called Chicken Lettuce Wraps 15 Minute Recipe. Top with green onions and sriracha.  This is a meal my whole family loves, my 2 year old has a hard time with the lettuce so we just serve hers over some rice and she eats it with a spoon.

Chicken Lettuce Wraps 15 Minute Recipe  – the filling can also be made the day before, just reheat and serve. It also freezes well, (not the lettuce) just the filling. In fact it has even more flavor the 2nd day, so don’t hesitate to do a little menu planning or meal prep and make your week night meals super easy!

Honey Garlic Chicken by Tiffany

Put your hands in the air if you love your crock pot! I LOVE when I find a great crock pot recipe or develop one, don’t you?! They just seem to make my sometimes crazy schedule much less hectic. The other night I was thinking about a recipe my mom gave me years ago. The recipe wasn’t for the crock pot and wasn’t even for chicken, buuuut I had an idea and got to adapting. Voilà! Honey Garlic Chicken was born. This recipe got a big thumbs up all around the table. I served Honey Garlic Chicken along side steamed broccoli with sour dough garlic toast, but rice or mashed potatoes would have made a great companion too! Enjoy.

Ingredients

  • 3/4 cup ketchup
  • 1/2 cup honey
  • 1/4 cup + 2 tablespoons soy sauce
  • 1/3 cup light brown sugar
  • 3 teaspoons minced garlic
  • 1 teaspoon dried minced onion
  • 1/4 teaspoon crushed red pepper
  • 7 boneless skinless chicken breast
  • 2 heaping tablespoons cornstarch

Directions

  1. In your crock pot/slow cooker, whisk together ketchup, honey, soy sauce, brown sugar, garlic, onion and red pepper together.
  2. Place chicken breast in crock pot/slow cooker, spoon sauce mixture over chicken.
  3. Cook on low for 5 hours or until chicken easily falls apart.
  4. Remove chicken breast from crock pot. Whisk cornstarch into the sauce mixture in your crock pot/ slow cooker, cover with lid and set crock pot/slow cooker to high. Sauce will thicken after about 5 minutes. Turn crock pot/slow cooker off. Return chicken to crock pot, cover chicken with sauce. Serve.

Ingredients

This is a fun recipe we made a while back that is a great way to use leftover chicken! We love making this for a quick lunch, appetizer or just as a snack!

 

BBQ Chicken Potato Bake recipe

You will need

  • 5-7 medium potatoes washed and sliced
  • 1/4-1/2 cup of your favorite BBQ sauce (can substitute salsa or alfredo if you don’t like BBQ)
  • 2-3  cups cooked chicken diced
  • 2 cups grated cheddar cheese
  • 3 green onions chopped
  • dash of oil to coat the potatoes so they don’t stick while cooking
  • Salt and pepper
Bake Time 30-50 minutes depending on oven and thickness of your potatoes

Wash you potatoes and slice in  thin layers about 1/8- 1/4 of an inch. Thinner you cut them the quicker they will cook.  Put a thin layer of olive oil on a cookie sheet and toss potato slices in it so they get an nice even coating.  Season with salt and pepper.  Place in the oven at 350 degrees for about 30 minutes or till they are fork tender.

Take out of the oven and top with cooked chicken, BBQ sauce, cheese and green onions.

Then put BACK IN THE OVEN at 350 degrees just till cheese it melted (normally about 5 minutes)

My kids love this!  If your little ones do not like BBQ sauce you can use salsa or alfredo sauce instead…yummy!

BLTA Waffle Sandwich

Sliced turkey breast, maple smoked bacon, avocado slices, red leaf lettuce and tomato pressed between two Eggo waffles. Oh boy, was this delicious. Yummy and messy, now that’s my kind of sandwich! Pass the napkins please. I love when you bite into a sandwich and get a wide variety of flavors happening all at once. This hit the spot!

Ingredients

  • 2 Eggo waffles – home style
  • 1 slice of cheddar cheese
  • red leaf lettuce
  • tomato slices
  • 3 slices bacon, crisp
  • mayonnaise

Directions

  1. In a medium skillet, fry bacon over medium heat until crisp. Remove bacon from pan. Place bacon on paper towels to help soak up the remainder grease. Set bacon aside.
  2. Set oven to broil. Meanwhile, toast waffles per packaged directions.
  3. Lay cheese slice on top of one of the toasted Eggo waffles. Place on a small sheet of foil. Stick under the broiler until cheese melts.
  4. Top melted cheese waffle with lettuce, tomato, bacon slices, sliced turkey and avocado slices. Spread mayo on the inside of the top part of waffle; top sandwich. Cut in half. Serve.
