Looking for a thrifty Easter Treat… how about Popcorn Easter Eggs!  These bright colored treats are bound to bring a smile to your little ones face!  You can buy the colors and flavors over at  Prepared Pantry.

How to make candy popcorn:

  • 3/4 cup un-popped popcorn kernels
  • 1/2 cup (1 stick) butter
  • 1/2 cup white corn syrup (Karo)
  • 1/4 cup water
  • 2 cups granulated sugar
  • 1/2 teaspoon baking soda
  • 3 teaspoons desired flavor
  • 3-4 drops of Americolor food coloring gel or equal

Pop the popcorn kernels with a popcorn popper. Set aside in 2 large bowls.
Over medium heat, melt the butter in a medium sauce pan.
Add the corn syrup and water. Stir.
Add the sugar. Make sure not to let any sugar stick to the edges of the pan. If one grain of sugar is left un-dissolved, it can cause the whole batch to crystallize.
Bring to a boil and continue to cook until the mixture reaches 235-245 degrees. (Please use a candy thermometer). It is important for the mixture to reach this temperature, if it doesn’t the candy will not harden properly.
Add the baking soda and stir quickly as the mixture begins to bubble. Once bubbly and frothy, remove the pan from heat.
Add the flavor and food coloring until mixed in.
Pour over the popped popcorn in both bowls. Fold into the popcorn until evenly coated.
Once the popcorn has cooled slightly, take a handfull and squeeze it in your hands to form an egg shape.
Tip: If you plan on making several different flavors/colors of popcorn do them all in separate batches. If you were to separate the mixture after cooking a large batch and add color/flavor to each, the mixture will have cooled too much and you will not achieve the right temperature for making candy popcorn.

Well you have all heard of Thin Mint Girl Scout Cookies, well these are their not-so-thin cousins.
Get your mug-o-milk ready for these minty chocolate wonders.
Adapted from The Girl Who Ate Everything.

Chubby Mint Sandwich Cookies

  • 1 box Pillsbury Devils Food cake mix or your favorite chocolate cake mix
  • 2 Tbsp brown sugar
  • 2 eggs
  • 1/3 cup oil
  • 3 Tbsp water
  • 1 cup Andes Mint Chips

Chocolate Frosting
Mint Extract
Green Sprinkes

In a bowl mix the cake mix, eggs, oil, and water together until a soft dough forms.

Fold in mint chips.

Use a 1” cookie scoop and flattened each ball a bit so it would make a slightly flatter cookie. Bake at 350 degrees for 8-10 minutes until set in the middle. Makes 30ish single cookies or 15 cookie sandwiches.

Mix some mint extract (a few drops or ¼ tsp) into your chocolate frosting and put in a piping bag or Ziploc with an end cut off. Pipe the chocolate mint icing onto one of your cookies and top it off with another cookie and roll in the green sprinkles for a little cookie bling

spicey orange chicken recipe

Tiffany newest member of the A Thrifty Mom team, first recipe… and it is a good one :)

I thought I’d kick off my new arrival with one of our absolute favorites, Spicy Orange Chicken. Our family loves orange chicken, and would eat it every night if I made it for them. But making orange chicken from scratch with all the breading and frying, gets very time consuming, very quick! I wanted to concoct an orange chicken recipe that was quick and easy. I also wanted a healthier version other than breading and deep frying the chicken pieces. I’ll tell you one thing I love about this recipe, it can be whipped up and frozen as quick as two shakes of a lamb’s tail. Great, for all of you who buy your chicken in bulk, like me! I’m always looking for new chicken recipes, how about you?

Serves 8 generously

Ingredients

  • 5 pounds boneless skinless chicken breast, cut into bite sized chunks
  • 2 tablespoon peanut oil
  • 2 tablespoons garlic, minced
  • 1 cup frozen orange juice concentrate
  • 1 cup brown sugar
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1 teaspoon chili garlic sauce {add more if you like it to bite back!}
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons cornstarch
  • 1 teaspoon ground ginger
  • 3 cups jasmine rice, cook per packaged directions

Directions

1. Wash and pat dry chicken breast, cut into 1 inch chunks or desired sized pieces.

2. In a large wok, heat oil. Add chicken and garlic, cook on high heat until juices run clear. Drain off any juices left in wok. Reduce heat to medium.

3. Add the following to wok, frozen orange juice concentrate, brown sugar, soy sauce, honey, chili garlic sauce {add more if you like it to bite back!}, fresh cilantro and ground ginger; stir continually until well combined. Add cornstarch to thicken sauce, cook, stirring continually for about 2-3 minutes, or until sauce slightly thickens. Serve over jasmine rice.

To prepare as a frozen meal: Wash and pat dry chicken breasts, cut into bite sized chunks. Fry as directed, draining juices. Let chicken chunks cool completely. In a medium sized bowl, combine orange juice, brown sugar, soy sauce, honey, chili sauce, cilantro and ground ginger, whisk; set aside. Combine the cooled chicken chunks along with the sauce in a gallon sized Ziploc bag, seal and freeze.

Bring frozen Ziploc chicken chunks and sauce bag to room temperature by thawing over night in the refrigerator. Place ingredients in a wok and cook on high heat until heated through, stirring continually. Add 2 Tablespoons of cornstarch to thicken sauce. Serve over jasmine rice.

Additional notes: I have noticed that by freezing this recipe the flavors have a better chance to marry. When I don’t prepare this as a frozen meal, I will remove the chicken and sauce from the heat and let it set for 30 minutes, then reheat. This technique allows the flavors to marry if not using the freezer technique. If you don’t own a wok, that’s okay! Just use a heavy duty, large skillet. Coach and I have kicked this up a notch by adding up to 4 teaspoons of the garlic chili sauce. Yeah, this much sauce bites back, but a good bite! We tend to like it spicy. But we have found that 1 teaspoon is tolerable for the younger ones on our end. Enjoy!

Falling in Love with Your Family by Alison

In a Nutshell: Allowing children to express themselves freely helps develop Psychological Autonomy.

I am usually delighted when I see my children becoming unique individuals.  I normally like it when they show independent thinking and dress up like a cow for the day or report they want to be a pirate for a living.   But sometimes I struggle with the desire to make them conform to what I think about the world, and turn into who I think they should be.  It’s like a life-long game of Simon Says.  “Simon Says… dress how Mommy wants.”  “Simon Says…enjoy my hobbies.”  There is a wonderful term used by Brent L. Top, Bruce A. Chadwick, and Janice Garrett in a study of how to help kids avoid at-risk behavior such as stealing, early sexual activity, and drug use.  They say one of the most important predictors of avoiding such behaviors comes from kids being raised in families where they are given Psychological Autonomy. Different from managing children’s behavior, this has to do with giving children permission to think their own ideas and form their own perceptions of the world.  In this study, over one third of teens studied said that their parents sought to control them by psychological manipulation, inducing guilt, or dismissing their thoughts and opinions.  One teen in the study reported:

One of my parents is very domineering and opinionated.  If you disagree, get ready to have a debate to the death or just give up to avoid trouble. In our family there is only one ‘right’ opinion and you’d better be sure that yours matches it.

Are you ever this parent?  The researchers explain some of the consequences of such an environment:

Under these circumstances youth fail to have confidence in their own feelings, ideas, and abilities and often emotionally withdraw inside themselves and develop emotional problems such as depression, eating disorders, and even thoughts of suicide. Young people who feel their ideas, thoughts, and feelings have been minimized, ignored, or outright ridiculed by their parents may seek out a peer group that will give credibility to their opinions and feelings….When parents suppress a child’s freedom of thought and expression, sometimes the only way that child feels he or she can express a sense of individual identity and value is to rebel.

One of the most basic human needs is to feel like we can think independently of others and make our own choices.  Children need to feel free to explore ideas, express themselves, and even to disagree in a respectful way.  During the teen years especially, this is not only a good idea, it is absolutely vital.  Here are a couple ways to allow Psychological Autonomy to flourish in your family.

  • Let them talk.  When a child says something you disagree with, responses like “That’s ridiculous!” or “You’ll change your mind when you get older” slam the door closed on communication.  Keep the door open by using statements like, “I can tell you’ve been thinking about this.  Tell me more.”  Letting kids get their thoughts out shows them it is safe to explore ideas without getting in trouble.  It also keeps the conversation going, so you can let your child know where you stand on issues and counsel with them.
  • Ask their opinion.  Current events in the news are great topics for conversation, even with small children.  Movies and TV can also provide opportunities to express ideas.  Try asking, “What would you do?” or “Do you think they made the right choice?”   I like to do this driving to school in the morning with our “Music Critics Club”.  We’ll choose a random radio station and let a song play (when it’s appropriate).  Then, we all rate the song from 1 to 10.  They get to practice expressing their opinions, and not jumping on people who think differently (like when a little sister gives a big brother’s favorite song a -28).
  • Let them explore interests outside of yours.  It is so easy to want kids to be in drama if you were, play football because you did, or be a ballerina because you always wanted to be one.  Psychological Autonomy includes letting children try activities that might not be what you wanted, and supporting their efforts.

Allowing children Psychological Autonomy can be a painful experience.  We may be scared that if we don’t tie our kids to the mast, they may fall overboard.  But as this study suggests, when kids feel like they have room to think and freedom to express themselves, they are actually less likely to rebel.  Some people may use the concept of Psychological Autonomy as an excuse for lax parenting.  But for kids to develop properly, parents need to balance this freedom of thought with rules and consequences as well.  In fact, this same study also found that Parental Regulation in the home is another strong indicator of kids avoiding at-risk behaviors.  (For more about the balance between warmth and control, see this post.)

So, if your child comes up with some off-the-wall comment or announces they want to collect ear wax for a living, remember they probably will forget it before the week is over, but they will always remember that you valued what they said.  We may not end up with little thumbnail photos of ourselves when all is done, but if we end up with free-thinking, independent, interesting people instead, I’d say the trade is worth it.

Our kids love fried mozzarella. When ever there is a special occasion and we go out to eat, our children beg for the fried mozzarella appetizers. So to solve their craving for breaded and fried cheese, we make them our home made “fried” mozzarella.

Ingredients:

  • String cheese
  • Bread crumbs
  • milk – 1/4 cup or less – just enough to wet the cheese
  • marinara, or spaghetti sauce, or ranch, or dip to your liking

Directions:

Carefully cut the string cheese into bite size pieces – You could even leave them full length,but small pieces make it fun for the kiddos

At this point the kid’s can join in – have them place the cheese into a bowl of milk, about a 1/4 cup

After a quick soaking in milk, gently place the cheese bits into a bowl of bread crumbs. Have them gently pat the bread crumbs onto the cheese. Remove the breaded cheese and gently place on a cooking sheet.

Bake at 425 degrees

for 6-8 mins depending on oven

Gently press cheese for softness

Enjoy!
