amazing meatball sandwich red potato salad, #amazingmeatballsandwichredpotatosaladRed Potato Salad
3 red potatoes per person
1 egg per person
and a stalk of celery per person
mayonnaise

Cut the red potatoes in quarters and put into a pot.
Cover potatoes with water and boil until the potatoes are tender.
Make hard boiled eggs, peel and slice.
Chop celery into slices. (My children do not like pickles, yet I love the crunch celery adds, and the color)
Once the potatoes are tender.  Drain the water.  Put the potatoes in a bowl.
Add the eggs, celery, and mayonnaise.  Mayonnaise is up to your liking.  I like a lot.
The mayonnaise absorbs into the potatoes when they are warm, so it takes a bit more.
Stir together.
Refrigerate, or serve warm!

This is a perfect meal to take on a picnic!

Dyed Egg Whites and Easy Deviled Eggs

We have probably all dyed eggs for Easter creating fun designs and beautiful colors, but what about the inside of the egg?  Have you ever tried to dye the egg whites? I found it was so easy and didn’t take long for a cheerful, bright presentation!  How lovely would these look on your Easter table?  Or dye them in red and blue for a 4th of July bbq!  The possibilities are endless!  I also think they would look lovely chopped up in potato salad or egg salad!  Let  me show you how to dye the egg whites, and some easy tips for perfect deviled eggs!

You will need

hard boiled eggs

8-10 drops of food coloring

cups

1/2 tbsp Vinegar per color used

1/2 cup water per color

paper towels

For the deviled eggs you will need

mayonnaise

pickle juice

spoon

salt and pepper to taste

sandwich baggie

To dye your eggs, first cook them.  Once they are boiled and cooled peel them.  Just before you peel them, prepare your water. I only did 3 eggs to try it out and only used 3 colors.  You will need 1/2 cup water, 1/2 tbsp vinegar and 8-10 drops of food coloring depending on the intensity of the color you desire.  Make sure it is stirred well.

Now, once your water is prepared and your eggs are peeled, cut them in half and put the yolk in a bowl.  Have a cute, little kitchen helper drop the egg whites into the prepared colors.

I only let them stay in the water for just 5 minutes and the colors were all very vibrant.  I you are going for more pastel shades, take them out sooner.

Once they are the desired shade, you are going to take them out and lay them upside down on a paper towel so all of the dye can drain out of them and they can dry.  They are already flipped over in this picture, but you can get an idea of the color!

Now. lets let them dry while we prepare the deviled eggs.  Mash up your egg yolks that you set aside in a bowl.  I don’t measure my ingredients usually for deviled eggs, it is more by watching the texture.  Since I only did 3 eggs, I maybe used 1 1/2 tbsp of mayo?  Just put small amounts in and mix well so you don’t end up with too much!  You can always add more, but you can’t take it away!  My “secret ingredient” is pickle juice.  Again, you don’t need a lot!  It helps give them great flavor without tasting like pickles!  Once your mixture is a nice, creamy consistency put it in a sandwich baggie and cut off the end.

Simply pipe the filling into your eggs.  You can get fancy and pipe into a nice design or just simply drop it in.  It is so much easier than scooping it into each egg with a spoon!  I don’t know about you, but deviled eggs aren’t something that gets made a lot here because they are kind of a pain.  This method definitely makes them easier and quicker!

That is it!  You are done! Just in time to add a lovely accent to your Easter table!

Recipe yields 50 wantons

You will need:

  • 8oz Cream Cheese
  • 1 cup mexi blend cheese

First step is to mix the cheeses, ranch and peppers together in a bowl. You can even make the filling the day before if needed or make it and  use it right away… either works just fine.  Open your wonton wraps lay each wrap out onto a flat surface. Put a small drop of filling into the middle of each wrap. Get a small bowl of water, dip your finger into the water and wet the edge of the wonton. Fold in half, the water will SEAL the edges together.

Fry the wontons in oil over medium-high heat.  They cool really fast, 15-50 seconds on each side, you will need to flip them once for even cooking.  Take out of the hot oil, drain on a paper towel.  If you want you can even bake them, but I prefer the fried ones!Jalapeno Popper Wontons recipe, Quick and easy perfect finger food for a party #Poppers, #Wontons, #recipe

1 pintrestMy kids love to paint!
Why not make a craft project with your kids using food coloring and milk ?
My kids range from 7-17 years of age,
and they all loved making their own piece of art out of bread.
2 ingredientsSupplies:
White Bread
Milk
Clean paint brush
Food Coloring
3 foodcoloringGather 4 cups and 4 spoons-
Pour 1/8 cup of milk in each cup with 3-5 drops of food coloring; stir.
4 painted breadPaint a fun design.  DO NOT apply too much milk so that the bread is soaked.
Apply a small amount of milk on the brush and lightly paint onto the bread.
If too much milk is added, it is okay, it will not completely dry when toasted.
Yet, it taste just the same.
5toasted breadToast the bread.  The toasted area will turn brown where the color is not at.
My daughter cut out some butterflies with a cookie-cutter and painted them too.
