If you like a good chip dip then this is a recipe you have got to try.  I had it for the first time about 15 years ago, it was a cold winter day we were getting together for a craft night with my cousins.  She pulled this hot bubbly chip dip out of the oven and we pretty much licked the pan clean… it was that good.  I told her I would love the recipe.  I was SHOCKED to find out how easy it was! I have been making it for social event ever since, and it is always a hit!

You will need

  • 1 80z brick of cream cheese
  • 1 can of Chili 15-19 oz(with NO beans) you just want meat and sauce
  • 2 cups grated Mexican blend cheese (or cheddar)
  • 3 green onions diced
  • 1/4 cup chopped cilantro
  • Corn chips to eat it with

In the bottom of a 9×9 pan spread the cream cheese in an even layer.  I use the back of a spoon, or just get my hand wet (prevents the cream cheese from sticking to it) and press into  an even layer.  Next open your can of NO BEAN chili spread in an even layer, top with grated cheese.

Put into  an 350 degree oven for 20 minutes or till cheese is totally melted and edges of the dip are bubbly. Take out of oven, sprinkle on the cilantro and green onions.  Serve with corn chips and watch it disappear 🙂

IMG_1929I know that there are thousands of bread recipes.  But  I love this recipe, it is quick easy and so far fail proof.  I have made it hundreds of times and they always turn out,  so in my book it is a keeper! I also like it because you do not have to knead the dough.  I have a lot of problems with pain in my wrists, so it works best for me.  My girls and I love cooking together, some times it would be faster or less messy without their help…. but I feel it is best to let them help while they are still eager to learn.

In large bowl add

  • 2 cups warm water ( if it is too hot or too cold…you will kill the yeast.  So make sure it is warm)
  • 2 TBS yeast
  • 1/2 cup sugar

Give it a few minutes in the bowl, to make sure your yeast is working.

Then add:

  • 3 eggs whipped lightly
  • 3/4 cup melted butter
  • 1 teaspoon salt
  • Sometimes I add 1/2 cup of apple sauce to make them extra moist, in place of part of the butter.

Mix well….

Start to whisk in the flour one cup at a time ( for a total of 6 cups) you will also need 1/2- 1 cup  when you shape the rolls.

You will need to switch over to a spoon to mix with,  on about cup 4 of flour.

Dough WILL be sticky, scrap down the sides of the bowl and cover with plastic wrap or a towel…I use both.

Set aside in a warm place, (like a sunny window seat) and allow to raise.  Till doubled in size. ( if you are in a hurry let rise 20 mins other wise let it rise 60 mins).  Works best to wait the full 60 mins.

Take off the plastic wrap, punch down to get the air out.  You will need to dust with flour.

Take out HALF the dough, spread on floured counter top. With your hands make  into a circle.  Keep dusting with flour so it is easy to work with. ( do the same with the other half of dough) I have found it is just easier to work with only half at a time.

Cut into wedges, and roll up in to crescent roll shape.  Or you can just make balls  in the shape of dinner rolls.

Place them on a greased pan, Bake 400 degrees 10-12 mins

Once cooked, brush a bit of butter on top to give them a nice shine.  Take off baking sheet, cool on cooling rack.

No Knead bread dinner rolls. Super easy to make and you can use normal All Purpose Flour or Bread Flour too.

Serves: 32 dinner rolls
Ingredients

  • ¾ cup melted butter (or do ½ cup butter and ½ cup apple sauce)
  • 1 teaspoon salt
  • 6 cups All Purpose or Bread flour works, may need more or less depending on dough.
  • ½-1 cup flour to use when you shape the dinner rolls before you bake them

Healthy Snacks Crispy Kale Chips

How many of you love something with crunch and a touch of salt… calling all potato ship addicts.  As much as I love a good potato chip they do not always love me back… maybe it is the fact that I am getting older? Or maybe it is the fact that I can eat  half a bag, not the little snack size back I am talking about the big family sized bag. Yip, leave it open next to me and slowly but surely they magically disappear.   Kale chips are a great way to satisfy that craving, in a healthy way.  They are really easy to make too!

What you need to make a batch:

1 bunch kale
2 T. olive oil
Salt and freshly ground black pepper

DIRECTIONS:

1. Preheat the oven to 275°F.
2. Fill a large bowl with water and add kale. Swish around to remove any dirt; drain. Dry thoroughly using a clean kitchen towel or salad spinner.
3. Tear the kale leaves into 1” – 2” pieces, discarding the ribs, and place in a large bowl.
4. Drizzle with olive oil and toss with your hands until evenly coated.
5. Arrange the leaves in a single layer (with NO overlap) on ungreased cookie sheets. Rub each leaf gently between your fingers as you work to ensure each is covered in oil. Sprinkle with salt and pepper. Optional: Sprinkle a small amount of parmesan cheese
6. Bake for 18 to 20 minutes or until leaves are crispy.

This is a fun recipe we made a while back that is a great way to use leftover chicken! We love making this for a quick lunch, appetizer or just as a snack!

 

BBQ Chicken Potato Bake recipe

You will need

  • 5-7 medium potatoes washed and sliced
  • 1/4-1/2 cup of your favorite BBQ sauce (can substitute salsa or alfredo if you don’t like BBQ)
  • 2-3  cups cooked chicken diced
  • 2 cups grated cheddar cheese
  • 3 green onions chopped
  • dash of oil to coat the potatoes so they don’t stick while cooking
  • Salt and pepper
Bake Time 30-50 minutes depending on oven and thickness of your potatoes

Wash you potatoes and slice in  thin layers about 1/8- 1/4 of an inch. Thinner you cut them the quicker they will cook.  Put a thin layer of olive oil on a cookie sheet and toss potato slices in it so they get an nice even coating.  Season with salt and pepper.  Place in the oven at 350 degrees for about 30 minutes or till they are fork tender.

Take out of the oven and top with cooked chicken, BBQ sauce, cheese and green onions.

Then put BACK IN THE OVEN at 350 degrees just till cheese it melted (normally about 5 minutes)

My kids love this!  If your little ones do not like BBQ sauce you can use salsa or alfredo sauce instead…yummy!
