Blueberry Overnight Oatmeal Recipe, Quick and easy healthy meal ideas #Oatmeal, #Blueberry, Greek Yogurt RecipesI am sure I am not the one parent with crazy busy mornings. Trying to get 4 kids ready and out the door with a healthy breakfast in their stomach is not always an easy task.  This oatmeal is a great “make ahead” meal idea.  You can mix it up to suit your families needs by adding different ingredients or flavor combos.

Blueberry Overnight Oatmeal Directions ­

  • 1/4 C. fresh blueberries
  • 1/3 C. old fashioned oats (quick oats will get really soggy)
  • 1/3 C. milk
  • 1/3 C. Greek yogurt (you could also substitute regular vanilla yogurt and omit the honey if you prefer)
  • 1­-2 tbs. of honey to taste
  • 1 8 oz. jelly jar w/ lid

Directions ­

1. Add the oatmeal, Greek yogurt, honey and milk to the 8 oz. jelly jar. Put the lid on and shake well to mix all the ingredients. When you’re done shaking, remove the lid and add the fresh blueberries. Replace the lid and refrigerate overnight. Enjoy in the morning. You eat it chilled.  If your in a rush just grab a jar out of the refrigerator and eat it as an on the go breakfast.

1 8oz. jelly jar = 1 serving.

cheese pizza monkey bread recipe

I was going to make the kids mini pizzas for dinner with Pillsbury Grands Biscuits.  But since I had just made Pecan Monkey Bread  I decided to try something a little different instead.  I made a Cheese Pizza Monkey Bread… and let me just say it turned out finger licking good!  Not to mention it looked really pretty too, I love it when a simple recipe turns out “looking all fancy”.

To make this recipe you will need

  • 1 Tube Pillsbury Grands Flaky Biscuits 16.3oz
  • 5 tablespoons butter  2 tablespoons to grease the pan and 3 to pour on top
  • 1/8 lb grated or cubed mozzarella cheese
  • 1/2 tablespoon Italian seasoning
  • 8 teaspoons pizza sauce
  • Any other topping you would like to add, (I added green peppers)
  • Bundtform Cake Pan

To prep your pan spread 2 tablespoons of butter on the pan then sprinkle 1/2 tablespoon dry Italian seasoning along the sides and bottom.  At the top of the biscuit pull it apart, stuff the inside with 1 teaspoon sauce, cheese and toppings.

Pinch the top back together to seal it back up.  Place seam side up on it’s edge in the pan.  Once you have all 8 of them stuffed, pour 3 tablespoons melted butter on top

Bake in a 350 degree oven for 15-20 minutes till top is a rich golden brown color.  Take out of oven and flip onto a serving platter.

Ingredients

I know that there are thousands of bread recipes.  But  I love this recipe, it is quick easy and so far fail proof.  I have made it hundreds of times and they always turn out,  so in my book it is a keeper! I also like it because you do not have to knead the dough.  I have a lot of problems with pain in my wrists, so it works best for me.  My girls and I love cooking together, some times it would be faster or less messy without their help…. but I feel it is best to let them help while they are still eager to learn.

In large bowl add

  • 2 cups warm water ( if it is too hot or too cold…you will kill the yeast.  So make sure it is warm)
  • 2 TBS yeast
  • 1/2 cup sugar

Give it a few minutes in the bowl, to make sure your yeast is working.

Then add:

  • 3 eggs whipped lightly
  • 3/4 cup melted butter
  • 1 teaspoon salt
  • Sometimes I add 1/2 cup of apple sauce to make them extra moist, in place of part of the butter.

Mix well….

Start to whisk in the flour one cup at a time ( for a total of 6 cups) you will also need 1/2- 1 cup  when you shape the rolls.

You will need to switch over to a spoon to mix with,  on about cup 4 of flour.

Dough WILL be sticky, scrap down the sides of the bowl and cover with plastic wrap or a towel…I use both.

Set aside in a warm place, (like a sunny window seat) and allow to raise.  Till doubled in size. ( if you are in a hurry let rise 20 mins other wise let it rise 60 mins).  Works best to wait the full 60 mins.

Take off the plastic wrap, punch down to get the air out.  You will need to dust with flour.

Take out HALF the dough, spread on floured counter top. With your hands make  into a circle.  Keep dusting with flour so it is easy to work with. ( do the same with the other half of dough) I have found it is just easier to work with only half at a time.

Cut into wedges, and roll up in to crescent roll shape.  Or you can just make balls  in the shape of dinner rolls.

Place them on a greased pan, Bake 400 degrees 10-12 mins

Once cooked, brush a bit of butter on top to give them a nice shine.  Take off baking sheet, cool on cooling rack.

No Knead bread dinner rolls. Super easy to make and you can use normal All Purpose Flour or Bread Flour too.

Serves: 32 dinner rolls
Ingredients

  • ¾ cup melted butter (or do ½ cup butter and ½ cup apple sauce)
  • 1 teaspoon salt
  • 6 cups All Purpose or Bread flour works, may need more or less depending on dough.
  • ½-1 cup flour to use when you shape the dinner rolls before you bake them

Ham and Cheese Sliders Recipe – Make the Night Before – Quick and Easy

We love this recipe! We recently made them at the beach! Its so easy, you just make them the night before. Let the soak and then cook them for lunch the next day! So so so good. It’s one of the easiest and best recipes around!

You will need

  • 2 dozen rolls (sliced in half)
  • 1 lb Swiss Cheese sliced
  • 2 Lbs sliced Ham

Sauce:

  • 1 Cup Butter melted
  • 4 Tablespoons Brown Sugar
  • 2 Tablespoons Poppy Seeds
  • 1 Tablespoon dry mustard
  • 1 Tablespoon Worcestershire Sauce

It will  be a recipe we make again, for sure!

Slice rolls in half, and add ham and Cheese.  Then put top back on. Place them on a large baking sheet. I had to use 2 cookie sheets.

Mix sauce in bowl, and stir to help dissolve sugar.

Brush sauce liberally on top of each roll, Drizzle any extra over the top.

Cover, and place in the refrigerator overnight.

Bake the next morning at 325 degrees, for 25 minutes COVERED with foil.

Then remove foil and bake 5-10 minutes longer.
