Banana Pecan Lime Cake

I was looking for a way to use up my bananas that had turned brown and decided to alter my apple cake recipe and use bananas and lime instead.  It turned out great, even the kids liked it. If you find you do not have enough bananas to make the recipe you can make up the difference with apple sauce or chopped apples.

Dry Ingredients

  • 3 cups flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cups sugar
  • 1 cup oil
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • zest of one lime and 1 tablespoon lime juice
  • 3 cups mashed bananas
  • 1 cup pecans chopped

Start out by mixing your dry ingredients together and set them aside.  In a large bowl you will want to add your  sugar, oil, eggs and milk  cream them till they are well blended.  Add in your dry ingredients one cup at a time.  Stir on medium speed for 2 minutes.  Fold in your vanilla, lime, bananas and nuts.  Pour batter onto a greased pan, and spread in an even layer, bake at 350 for 25-30 minutes till toothpick comes out clean.  If you bake in a 9×13 dish increase cooking time to 30-35 minutes.  Allow to cool, then frost.

Frosting recipe

  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/2 tablespoon lime zest
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla

Let your cream cheese soften (or you can toss it in the microwave for about 15 seconds if you are in a hurry). Cream the cream cheese and sugar, add vanilla and lime.  Add milk till desired consistency is achieved.  Wait for cake to cool and frost.  Enjoy

Baked Potatoes in the Crock Pot

Thanks to Purposely Frugal  for passing along this recipe for how to make baked potatoes in the crock pot (instead of the oven).  We have a rule in our family that we never leave the house with the oven on… so I love this idea.  Plus on a hot summer day the last thing you want is your oven on all day.  Not an issue in winter ( heck most days I want to snuggle up to my oven just to stay warm…lol.)

 

  1. Scrub and pat dry your potatoes
  2. Poke a few holes in them with a  fork.
  3. Rub in oil (I used olive oil) and salt.
  4. Wrap in aluminium foil and put in your crock pot. I cooked 6 potatoes on low for 7 hours, but you may need to vary the cooking time, based on the size and number of potatoes and your crock pot.
  5. Enjoy with your favorite toppings!
No need to add water to the bottom but to keep the bottom ones from burning rotate them OR add some crumbled foil on the bottom before you add the potatoes.

Crock Pot Tip: A crock pot uses about 8 cents of electricity in 7 hours, whereas an oven uses between 16-24 cents per hour of use. I know the savings is small, but crock pots also keep your house cooler in the summer! Information from Michael Bluejay, a.k.a Mr. Electricity.

 I Love to stock up on deals like this and stock the freezer. These Coconut Snowballs with Hot Fudge Sauce are one of my families favorites.  The best part is you can make them days BEFORE the party, and  then just grab a frozen snowball and top with hot fudge and a strawberry for a FAST and easy dessert that looks so elegant.  I show you how to make them in the video below, be sure and check it out.

Start by first toasting 2 cups of flake coconut in the oven or in a skillet on the stove on medium/ high heat.  Stir continually so it does not burn. Take off heat and allow to cool.  Scoop balls of Breyers vanilla ice cream into your hands and form a ball. Roll the ball into the toasted coconut. Set on a plate, cover will plastic wrap and put back in freezer to harden up. Once you are ready to serve put on serving dish, drizzle with hot fudge and top with your choice of fresh fruit, we will strawberries. Boom… your done and you have a rockin awesome dessert :).

Butterscotch Pecan Baked French Toast

My family loves this recipe, and I love how simple it is to make. Best part is you can make it up the night before if needed and then just pop it into the oven to bake in the morning.  This recipe is not over the top sweet but has a great butterscotch flavor and a great way to start any day.

Recipe yields 8 mini loaves or one 9x 13 casserole dish

  • 8 cup cubed bread
  • 2/3 cup white sugar
  • 7 eggs whipped
  • 1 stick melted butter
  • 1 1/2 cups whole milk
  • 1 box (3.2oz) Jello Cook and Serve Butterscotch Pudding
  • 1 cup chopped pecans

Heat oven to 350 degrees, coat mini loaf pan or 9X13 casserole dish with nonstick spray and set aside.

Mix together the  melted butter, sugar, pudding mix, and milk stir till well blended. You can then add in the whipped eggs, cubed bread and nuts. Stir till well coated, let set for 10-15 mins to give the bread time to soak up the liquid.  Or you can let it set overnight in the refrigerator. Put into a mini loaf pan,  casserole dish or cupcake tin (make sure you coat with non stick spray).  Bake at 350 degrees for 30-35 mins.
