Fast and Easy Lunch for Kids – English Muffin Pizzas

English Muffin Pizzas Recipe

It’s Katie! It’s summer and my kids are hungry. All. The. Time. They get bored of leftovers and sandwiches so for lunch we try and change it up every now and then. We make English Muffin Pizzas and the kids love helping. It’s a fast and yummy recipe that the kids love.

Ingredients

  • English Muffins – I used whole wheat ones for a bit healthier option. Sometimes we use flat breads.
  • Mozzarella Cheese – I buy the block and cut slices but you can also use shredded.
  • Pepperoni – Or any toppings you want.
  • Marinara Sauce – Or your favorite pizza sauce.

Directions:

Step 1. Turn on your oven broiler so it can preheat while you assemble the pizzas.

Step 2. Lay out the english muffins on a baking sheet

Step 3. Use about 1 tablespoon of sauce for each half of english muffins and spread it around.

Step 4. Put your slices of cheese on top of the sauce.

Step 5. Put pepperonis on top of the cheese.

Step 6. Broil. The amount of time depends on your broiler and how high your rack is in the oven. I leave my rack in the middle and keep an eye on them because they can go from sort of melty to done quick!

Step 7. Enjoy! These are so easy and fun for kids to help make.

I served these today with cucumber slices and strawberries.
