Mom what’s for Dinner?

The question I hear everyday……Mommy what’s for dinner I am hungry.  Most days I have my meals planned, and I am prepared for dinner, so I don’t hit melt down mode come 5pm.  I know some of you are super organized, have meal charts, menu plans, etc.  I think that is a great idea, works for lots of people but not something I do.  I do plan a few days ahead, but I never write it down or chart it out.

I have a pantry full of the canned or dry goods that we use often, or the main ingredients to our favorite meals  ( pasta, can veggies, canned sauces, rice, grains, flour, sugar, etc. )  Plus we have a freezer full of items such as meat, frozen veggies, rolls, freezer meals.   All of these “stock up items” have been purchased with coupon or sale, at a price that I am willing to pay, which cuts down on my overall meal cost.  But what normally determines what I will feed my family that week is the fresh items I have purchased, and I plan my meals around them.  Items like, tortillas and breads, dairy, lunch meat, salad, fresh fruits and veggies, etc.

This way of meal planning may not work for everyone.  It is sometimes hard, it would be easier to by whatever I wanted that week, or what ever looked good.  But that type of shopping does not fit into my budget so this is what works for my family. So weather you plan monthly or weekly, with sale items or non sale items….I think just having a plan is a huge key to not going crazy come dinner time.

No matter how much planning I do I still have days that I am behind, and am looking for a quick and easy last minute meal idea.  Being that I have not been feeling well the last week or two, I have been looking for a few ideas.  I feel rather guilty when my kids ask what is for dinner and I tell them Peanut butter and Jelly, or Tuna sandwiches…..again.  So my question for you is WHAT DO YOU FEED YOUR FAMILY AS A LAST MINUTE MEAL?  How do you plan your meals? I would love to hear your ideas.
