Peach Crisp recipe for one ~ with Pecan Crumble Topping
Lets face it we do not all come from a huge family, so some times you need a recipe just for one person…. no reason to make a whole casserole dish full when you can make one perfect dessert just for you. This Peach Crisp for one, is amazing and served with a big scoop of ice cream is dangerously good 🙂
You will need:
- 1 cup fresh peaches, peeled and sliced
- 1 1/2 tablespoon sugar
- 1/4 teaspoon cinnamon
- 1/2 tablespoon corn starch
Crumble Topping
- 3 tablespoons chopped pecans
- 3 tablespoons brown sugar
- 1 1/2 tablespoons flour
- 3 tablespoons quick oats (oatmeal)
- 1/4 teaspoon cinnamon
- 1 tablespoon butter, at room temperature
Mix all the ingredients together, use a fork to work in the butter. Once well mixed sprinkle on top of the prepared fruit. Place in a preheated oven at 375 degrees for 30-35 minutes. I put it on a baking sheet while in the oven in case it boils over during baking. Take out of oven let rest for 10 minutes before serving, and enjoy!
On a side note if you want a QUICK instant treat you can microwave it on high for 3-5 minutes. But it does not turn out near as well. The topping becomes becomes kind of chewy. But if you do not have an oven or are in a hurry this is an option as well. The photo above is what it looks like cooked in the microwave.
