Rainbow Eggs ~ Kid Friendly Recipe, Eggland’s Best Eggs

Easter is over and most of us have a few dozen hard boiled eggs sitting in the refrigerator waiting for someone to eat them up.  My girls wanted to have a tea party (a Fancy Nancy party to be exact)  so everything had to be extra special. Because Fancy Nancy is all about going over the top and being fancy.   You should have seen my girls eyes when there eggs were transformed into FANCY eggs with bold colors!  They squealed with delight!

So do you want to know how to make your own?  They are super easy!  All you need is some food coloring, water and vinegar (oh and hard boiled eggs).

Peel your hard boiled eggs, cut them in half and take the yolk out.  Put the yolk aside you will need it later.  In a small bowl add 1/4 water and 1 teaspoon vinegar and 3-5 drops of food coloring.

Let the eggs soak for 1-3 minutes depending on how dark you want them.  Take them out rinse them with water and set them on a napkin to dry.  In a bowl break up the egg yolks (12 of them). Once you have the yolks broken up add 1/3 cup mayo, 3 tablespoons pickle juice, add salt and pepper to taste.  If you find your mixture is still to thick you can thin it down with more pickle juice or mayo.  Mix well and place in a ziplock bag or a pipping bag that you would normally use for frosting.

  1. This is such a great idea for a springtime or summer party. I’m dreaming up a garden party for my little girls now. :p So cute and easy.
