Red potatoes with Parsley

atmgraphicrecipes (1)Ok so this is a VERY simple recipe, but it was really tasty.  Matt LOVES potatoes so I am always looking for a new way to make them.   His Mom made these last time we went to visit, and  we all really liked them.

Wash and cut Red potatoes into cubes.

Add to a large pot of water,  salt, then bring to a boil.  Cook till fork will insert, easily  (cooking time will vary with  size of potatoes, and how many you are cooking)

Drain water add butter, salt and pepper and parsley  ( fresh would be even better, but all I had wad dried).

I made this the other night, and it was SOOO good! I'm ashamed to admit it's the first time I've EVER made potatos that didn't come in a box or bag. It was so easy and delicious, I plan on doing it again very soon!

we love potatoes cooked then w/ a splash of vinegar and fresh dill! It is amazing! And no dairy so it can sit out if at a picnic or something.

I have made these with oil & then baked them.

We make these too with Olive Oil. Great with steak!

Instead of (or in addition to) the parsley, we find that cilantro is really good. I chop fresh cilantro and add it to boiled red potatoes and butter, and fresh ground pepper. Yummy!
