I know a lot of people love SPAM which always had me a little confused. Canned meet that flops out of the can with a little bounce and a giggle, coated in a bit of Spam Jelly (that funky clear jelly stuff all over it) kind of makes me want to gag. I would pass it in the store and say ” who buys this stuff?”
Well just last month my friend Jessica invited me to an authentic home cooked Japanese meal. Her mother is from Japan and cooked us all an amazing dinner. She made fried rice with spam but this fried rice was honestly the BEST fried rice I have ever tasted in my life. The salty bits of spam were the perfect blend with the rice and veggies. I seriously could not get enough… SO long story short I now understand why people buy Spam. I just had no idea how to cook it before, I am now their newest Spam fan. Now I just need an adorable little Japanese mother to teach me how to make her secret recipe for fried rice with Spam.

Here is a recipe that is similar to the one I ate the other night.
Fried Rice With Spam Recipe
Fried Rice Ingredients:
- 2 cups leftover rice
- 1-1/2 cups SPAM, cut into match stick size pieces
- 1/2 cup peas
- 1/2 cup minced carrots
- 1 egg
- 2-3 tablespoon soy sauce
- 3 tablespoon sugar
- 1 teaspoon oyster sauce
- 1 tablespoon sugar
- 3 green onions, thinly sliced
- Sesame Oil
Instructions:
Heat a small amount of sesame oil into a skillet and brown spam pieces on all sides. Mix in the rice, carrots and peas. Mix the egg with the soy sauce, sugar, oyster sauce and stir into the hot rice and spam. Stir gently until the egg is cooked. Sprinkle green onions on top and serve.
