Are you hosting a family breakfast anytime soon, or maybe a brunch with the girls. Here is a “fancy recipe” that is easy but OH SO YUMMY and looks pretty too. Recipe was adapted from the Celebration Cookbook.
You will need
- 2 (8 ounce) cans refrigerated crescent rolls
- 1 cup deli ham diced
- 4 oz cream cheese (room temp or softened)
- 2/3 cup milk
- 8-9 large eggs
- ¼ teaspoon salt
- Pepper just a pinch
- 2 tablespoons chopped red onion
- 2 tablespoons chopped red bell pepper
- 1 teaspoon butter
- 3/3 cup shredded cheddar cheese
Preheat oven to 375 degrees. Unroll each tube of crescent dough make them into a rectangle, set them on a greased baking sheet with long sides touching. Pinch the two halves together so they form one long rectangle. Sprinkle the ham down center of rectangle, sprinkle the red onion and bell pepper down the middle as well..
In a mixing bowl, beat cream cheese and milk. Separate one egg; set egg white aside. Add the egg yolk, remaining eggs, salt and pepper to cream cheese mixture and mix well. In a large skillet, melt butter; add egg mixture. Cook and stir over medium heat until just set. Remove from heat and spoon scrambled eggs over ham. Sprinkle the cheese on top.
On each long side of dough, cut 1 inch wide strips to the center to within ½ inch of filling. Starting at one end, fold alternating strips at an angle across the filling. Pinch ends to seal and tuck under. Beat reserved egg white and brush over dough. Bake for 25-28 minutes or until golden brown.
