Twice Baked Potatoes Recipe

We had baked potatoes this week for dinner. I had 5 extra so I went ahead and prepped them for twice  baked potatoes, and planned to eat them later in the week. I never follow a recipe for these,  but here is what I did.

Cut the 5 cooked potatoes in half length wise. With a spoon scrap out the middle, leaving a 1/4 of potato next to the skin.

Mash up the potato that you took out with a fork.  I had 5 large potatoes, so I then added 1 cup sour cream, 1/4 cup butter, 1/2 cup grated cheese, and left over bacon and chives that we ate on our baked potatoes that night for dinner…. so about 2 tablespoons of each. Salt and pepper to taste.

Mix together then add it back into the potato skins.  I was not planning on eating them that day, so I covered them with plastic wrap and put them in the refrigerator.

Two days later I wanted to use  them as a side dish for dinner.  So I put them on a baking sheet, baked at 350 degrees for about 30 minutes.  Last 5 minutes of baking I sprinkled a little more cheese on top.
