Veggie Ranch Wraps
- 4 (6?) wheat tortillas
- 3 T. light ranch dressing
- 1/2 c. packed baby spinach
- 1 ripe avocado
- 1 T. fresh lime juice
- 1/2 c. chopped fresh tomato (or substitute w/ roasted rell bell pepper, sliced)
Spread each tortilla w/ a little dressing. Layer w/ spinach.
Slice avocado & toss w/ lime juice (prevents browning). Place avocado & tomato along bottom edges of tortillas. Roll tightly, cover w/ plastic wrap & chill until you are ready to eat.
Substitute with your favorite dressing & veggies to make these suit your taste.
