Hinode Rice Taco Rolls

Ingredients 

  • 1 package Hinode Heat & Serve Rice
  • 1 brick cream cheese 8oz
  • 1 cup sour cream
  • 1 taco seasoning packet 1.25 oz
  • 3/4 cup chopped red onion
  • 3/4 cup chopped green bell pepper
  • 3/4 cup chopped roma tomato (with seeds taken out)
  • 3/4 cup fresh sweet corn (steamed and cut from the cob)
  • 10 inch flour tortillas 10 count 
 In a bowl blend the  cream cheese, sour cream and taco seasoning, set aside 1/4 a cup of seasoned mixture. Cook the Hinode Heat & Serve Rice according to package instructions.  Stir in 1/4 of seasoned mixture to cooked rice till well blended.  Lay a 10 inch flour tortilla flat and add 2-3 tables spoons of rice on one end.  Then evenly spread the seasoned cream cheese mixture over the other 2/3 of the the 10 flour tortilla.
Start rolling the tortilla up on the rice end first.  Once rolled place the tortilla roll in the bottom of a 9×13 pan.  Once you have all 10 tortillas rolled cover with foil, and place in refrigerator for a least 4 hours.  Once chilled, cut each tortilla roll in 1 inch segments.  Serve cold, perfect finger food for a  summer BBQ with friends!
*To make this a healthier recipe you can substitute the  cheese and sour cream for 1 1/2 cups humus OR 1 1/2 cup light plain yogurt. Or use whole grain tortillas instead of flour tortillas.
