Chicken and Broccoli Cheesy Biscuit Bake

Do you need a quick and easy dinner idea.  If you like a great casserole then you have got to try this Chicken and Broccoli Cheesy Biscuit Bake recipe.  I takes about 10-15 minutes to toss everything together and you have a meal ready to go into the oven.

What you  will need to make this recipe:

  • 7 tablespoons (3/4 of a cube) butter melted
  • 4 cups shredded chicken ( you can use canned chicken  if in a rush)
  • 2 cups steamed broccoli  (use the frozen stuff in a bag if your in a rush)
  • 2 cups Bisquick Mix
  • 1 1/2 cups half and half
  • 1 cup chicken broth
  • 3/4 cups sour cream
  • 1 cup grated cheddar cheese
  • 9X13 baking dish

Step 1: In the bottom of a 9×13 baking dish pour melted butter.  Evenly coat bottom of pan and the sides.  Sprinkle in shredded chicken, then put broccoli on top of the chicken.  I used boiled chicken breast, that I then shred.  But if you are in a hurry you could use canned chicken.

Step 2: In a small mixing bowl mix 2 cups bisquick mix and 1 1/2 cups half and half.  Pour this mixture over the chicken and broccoli. Mixture might be a little lumpy, but that is ok.

Step 3: Combine the chicken broth and sour cream, stir together and pour gently over the top of the biscuit mix (do not mix, they need to be poured separate). If you  mix it the bisquick becomes to soupy and does not bake right.

Step 4: Sprinkle the cheese on top and  bake in a 350 degree oven for 35-40 minutes.

chicken pillow recipe

I have posted this recipe before… but thought I would post it again since I am making it for dinner tonight. Thought you might want a simple dinner idea. This recipe is one that my whole family loves, it is quick and easy to make and comes out delicious every time. IMG_2462 I thought I would pass along one of my favorite ways to use cressent rolls.

  • 2 cups cooked shredded chicken
  • 1 8oz cream cheese
  • 3 green onions chopped
  • 1/4 cup celery chopped fine
  • 1/2 cup grated cheddar cheese
  • 1/8 teaspoon salt, pepper, garlic powder

You will need one package of crescent rolls,

Mix the items listed above in bowl, and spoon 2 TBS into each crescent roll.

If you find the triangle  hard to work with you can make larger ones buy using two rolls, in a rectangle shape folded in half.  Just add twice the amount of filling since you are using two rolls.

IMG_2459We eat them with chicken gravy on top.  ( Can of Cream of Chicken soup, thinned down with a little bit of milk)

Marinades are a great way to boost flavor when cooking meat.  They are so easy and will give you a juicy, moist and flavorful cut of meat.

The other day I pulled 3 frozen chicken breast out of the freezer and needed to come up with  a dinner idea, I decided to make a Spinach Pecan Salad with Mandarin Oranges and Grilled Chicken breast (will post recipe late).

I have never been one to follow recipes instead I tend to create my own (sometimes they turn out better than others..lol)

I decided to make a Cilantro Lime Marinade and it turned out absolutely delicious and one that I will be adding to our favorites list.

Ingredients 

4 Tablespoons  Lime Juice

4 Tablespoons Olive Oil

4 Tablespoons  Cilantro minced

Pinch of Salt and Pepper

2 Tablespoons Brown Sugar

2 Tablespoons  Balsamic Vinegar

1 Garlic Clove minced

I added it right to the bag of frozen chicken, mixed it around so the chicken as well coated.  After 2 hours the chicken was thawed and I grilled it up on the George Foreman Grill.  If your chicken is not frozen you can marinate it for 30minutes to an hour then cook. I posted this recipe about 2 months ago, it one of my families favorites.  This week at Albertsons the Mr. Yoshida’s Teriyaki sauce is on sale, as part of the Epic savings promo.  It is only $1.99 a bottle which is a really good price.  I am able to use one bottle to make 3 meals.  I just thought I would pass it on.

Thrifty Deals into Thrifty Meals

This is one of my family favorite meals.  The best part is, it takes about 15 minutes to make!

I was able to make this meal for my family of 5 for $3.75
That is .75 cents a person

Here is the price break down,

Teriyaki Chicken over rice

First start out by getting your rice cooking on the stove, it takes the longest to cook.

img_0717 Once you have the rice started, cut up your boneless skinless chicken breasts into thin strips across the grain of the meat.  Add a about 1 table spoon of oil to the bottom of your pan. Cook the strips  on medium high heat till just  done. ( do not salt them….the sauce is salty)  Then turn your heat down to medium low and add sauce. ( now start to cook your broccoli so it will be done the same time)

img_0722My families favorite teriyaki sauce is Mr. Yoshida’s, you can find it at Winco or Albertsons.  I found it on sale about a year ago for  $2.00 a bottle and I stocked up.  I use 1/3 off a bottle of Mr. Yoshida’s but I also add 1/3 of a cup of brown sugar and 2/3 cup water with a large table spoon of corn starch mixed into the water. ( make sure you dissolve the corn starch in the water, if you add it to the hot pan it will be all lumpy)

The corn starch will thicken as it comes up to boil…stir so it does not burn.  Then take off heat once it has thickened.
