Homemade Rosemary Pecorino Romano Crackers

My kids love homemade crackers, what about yours?! They especially love this flavored cracker. You’d think the fancy ingredients in this recipe would turn a kid off, but on the contrary, the flavor of this cracker is the bomb diggity for both kids and adults. Quick! Gather your kiddos for this easy recipe that they can make in the kitchen, with supervision of course. 😉 Get creative and adapt the spices and cheese for your favorite flavor cracker. We also did an onion garlic cheddar cracker that rocked the house too! You can find that recipe below the main one. Enjoy!

Ingredients

  • 2 cups unbleached all-purpose flour
  • 2 teaspoons organic evaporated cane juice sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked pepper
  • 1 teaspoon fresh or dried rosemary
  • 2 tablespoons salted butter
  • 2 heaping tablespoons grated pecorino romano cheese
  • 3/4 cup heavy cream, plus extra if needed

Directions

  1. In a medium bowl, whisk together flour, sugar, salt, pepper and rosemary. Using a fork or pastry blender, cut in butter until you get pea sized coarse crumbs. Next, stir in pecorino romano. Now, pour in the heavy cream and mix with a fork adding a bit more cream if needed.
  2. Gently press the dough together and shape into a disk. Wrap disk in plastic wrap, let rest at room temp. for 20 minutes.
  3. Meanwhile, preheat your oven to 350 degrees F.  Lightly spray two heavy duty medium sized baking sheets with non-stick cooking spray.
  4. Unwrap the disk and divide dough in two equal pieces. Lightly flour your work surface and rolling pin. Roll each dough ball out as thin as possible,  lightly dusting surface and rolling pin with flour if needed. Carefully transfer the rolled out sheets to your prepared baking sheets. Cut dough into squares with a pizza cutter or leave whole and bake in  your preheated 350 degree oven for 12-15 minutes or until lightly brown.
  5. Transfer crackers to a cooling rack and let cool completely before storing. If you baked your crackers whole, once cooled, break into shards.

Recipe for Onion Garlic Cheddar Crackers

From recipe above omit the rosemary and pecorino romano. Add 1 teaspoon onion powder, 1 teaspoon dried chives, 1/2 teaspoon garlic powder and approx. 3 tablespoons grated cheddar cheese. Bake as directed above.

rainbow eggs

Easter is over and most of us have a few dozen hard boiled eggs sitting in the refrigerator waiting for someone to eat them up.  My girls wanted to have a tea party (a Fancy Nancy party to be exact)  so everything had to be extra special. Because Fancy Nancy is all about going over the top and being fancy.   You should have seen my girls eyes when there eggs were transformed into FANCY eggs with bold colors!  They squealed with delight!

So do you want to know how to make your own?  They are super easy!  All you need is some food coloring, water and vinegar (oh and hard boiled eggs).

Peel your hard boiled eggs, cut them in half and take the yolk out.  Put the yolk aside you will need it later.  In a small bowl add 1/4 water and 1 teaspoon vinegar and 3-5 drops of food coloring.

Let the eggs soak for 1-3 minutes depending on how dark you want them.  Take them out rinse them with water and set them on a napkin to dry.  In a bowl break up the egg yolks (12 of them). Once you have the yolks broken up add 1/3 cup mayo, 3 tablespoons pickle juice, add salt and pepper to taste.  If you find your mixture is still to thick you can thin it down with more pickle juice or mayo.  Mix well and place in a ziplock bag or a pipping bag that you would normally use for frosting.

Breakfast Bananas~Money Saving Recipe~Easy & Healthy by Tiffany

Here’s a quick, easy, healthy, fun breakfast idea that my kiddos absolutely love. You know what I love about this? Everything! There’s something about feeding my kids healthy that makes me feel sorta like a super mom. I can’t and don’t claim to be the best mom EVER, but knowing that they are getting something yummy that’s healthy for them too, score!

Ingredients

  • bananas, firm
  • peanut butter (I used Crunchy)
  • honey
  • favorite healthy cereal or granola (we used gluten free organic Koala Crisp cereal)

Directions

Peel banana half way down or more depending on your child hand size. You will want just enough skin left on the banana for the part to hold. Gently spread peanut butter all over exposed banana, drizzle with honey and roll in your favorite healthy cereal or granola. Enjoy!

Notes: You will want to use firm bananas, not green, (unless you like them that way) if you want to leave the peel on for your kids. Otherwise the banana will break off when trying to spread the peanut butter all over it. 🙂 Yes, I learned the hard way. If not, use softer bananas and remove the entire peel, doctor it up and serve on a plate. 🙂
