Deviled Eggs happen to be one of my favorite foods, when they are made right I can eat a whole plate of them (not that I have ever done that…lol).  It must be something in our family, because my little brother told his wife that deviled eggs are the perfect side dish, they GO WITH EVERY MEAL.  She thinks he is nuts, but I kind of agree with him.  If you do not share our love for deviled eggs, then maybe you are just looking for a great bbq side or holiday finger food idea… we still have you covered :).  These spicy deviled eggs are a great twist on the classic recipe.

Ingredients for Spicy Deviled Eggs :

  • 1 Dozen Hard Boiled Eggs
  • 1/4 Cup Mayonnaise
  • 3/4 Teaspoon Yellow Mustard
  • 1/2 Tsp Serrano or Jalapeno Peppers (Finely Diced)
  • 1/2 Teaspoon Garlic Salt
  • 1/2 Teaspoon Cayenne Pepper
  • Paprika (Optional)

Directions for Spicy Deviled Eggs :

Peel the hard boiled eggs then cut them in half lengthwise. Softly coop out the egg yolks and transfer them into a medium size mixing bowl.Add the mayonnaise, mustard, Serrano peppers, garlic salt and cayenne pepper and mash with a fork until fully combined. Taste to see if additional salt is needed. Place the mixture into a frosting bag or Ziploc bag (with the tip cut off) and pipe the filling into the empty egg whites. If you don’t have either of these items, just scoop the filling into the egg whites with a small spoon. Garnish with paprika and slices of Serrano pepper. Place the eggs on a serving tray and refrigerate until it’s time to serve. Hint for less spicy use jalapeno peppers instead.

I love to eat them in Hot Dog Buns.
Perfect for picnics.
Eat them cold in a bun for Easter Weekend lunch-
Eat them warm for a game day appetizer!
I love to eat potato salad as a side.
Such comfort food!
Amazing Meatballs-Ingredients, Meatball Sandwiches, #amazingmeatballs, #amazingmeatballsandwiches
MeatBalls
1½ pounds of ground beef
¾ cup of milk
1 cup of quick oats
½ cup of chopped onion
1 egg
1 teaspoon of salt
1 Tablespoon of chili powder
¼ teaspoon of pepper
¼ teaspoon of garlic powder

Mix meat ball ingredients all together.
Form meat into the size of golf balls, and place on a cookie sheet and for 30 minutes at 350°.
While the meatballs are cooking, make the sauce.

2 cups of ketchup
¾ cup of brown sugar
2 Tablespoons of Liquid Smoke
½ cup of chopped onion
½ teaspoon of garlic powder

Mix the sauce ingredients together in the crockpot while the meatballs are cooking.
Add the meatballs from the oven to the crockpot and coat with the sauce.
Simmer on low for 1 hour.
Serve in a hotdog bun or individually

HINT
They are better the next day!

3 red potatoes per person
1 egg per person
and a stalk of celery per person
mayonnaise

Cut the red potatoes in quarters and put into a pot.
Cover potatoes with water and boil until the potatoes are tender.
Make hard boiled eggs, peel and slice.
Chop celery into slices. (My children do not like pickles, yet I love the crunch celery adds, and the color)
Once the potatoes are tender.  Drain the water.  Put the potatoes in a bowl.
Add the eggs, celery, and mayonnaise.  Mayonnaise is up to your liking.  I like a lot.
The mayonnaise absorbs into the potatoes when they are warm, so it takes a bit more.
Stir together.
Refrigerate, or serve warm!

This is a perfect meal to take on a picnic!
