Delicious Fish Salad

Here is a recipe for one.  Just double, triple, etc. for as many people as you need to feed.

1 piece of individually frozen vacuum-sealed salmon (plain or marinated) or a flaky white fish (such as orange roughy, halibut, etc.)

BBQ Sauce if using Salmon, Soy Sauce if using a white fish

2 cups of fresh romaine lettuce

1-2 TB of a sweet fruit – such as craisins, sliced fresh strawberries, halved grapes, finely sliced apple, etc.

1-2 TB of a seed or nut – such as sunflower seeds, pumpkin seeds, almonds, peanuts, pecans, etc.

Good Seasons Salad Dressing or another vinaigrette you like.

1.       Cook the fish:

–          Salmon – defrost the fish in your refrigerator or submerge in a cool water bath until defrosted.  Bake the specified time for the portion as listed on the package.  A few minutes before it is done, give it a generous brush of BBQ sauce and then finish cooking.

–          White fish – defrost the fish in your refrigerator or submerge in a cool water bath until defrosted.   Heat a skillet with a little olive oil.  When hot add the fish and cook over medium heat for 3-5 minutes.  Give a few liberal dashes of soy sauce on top, flip the fish in the skillet and then cook through.

2.        While the fish is cooking toss your salad.  Add the romaine, fruit, and nuts into a bowl.  Add a tablespoon or two of your favorite vinaigrette dressing and toss thoroughly.

3.       Put the salad on a plate, place the cooked fish on top – and enjoy.  It’s super simple and really delicious!
