Recipe for Olive Garden Zuppa Toscana Soup #CopyCatRecipe

Ingredients

  • 1.5 lbs Italian Sausage
  • 6-8 cups chicken broth if you do not have it you can substitute water, but broth tastes MUCH better
  • One medium onion diced
  • 6-8 Cubed Medium Sized Potatoes with skin
  • 3/4 Teaspoon Salt
  • 3/4 Teaspoon black pepper if you want to spice up ad some red pepper flakes 1/2 teaspoon
  • 3 cups Heavy Cream
  • 6 cups Kale Leaves

Instructions

  1. Put the sausage and one medium onion (diced) into a large soup pot. On Medium heat brown the sausage and onion.
  2. I like to let mine get a little "crisp" around the edges, it seems to hold together better in the soup.
  3. Once the meat is cooked you will need to drain it, because it will have a lot of grease on it. You can even rinse it if you want, but I just normally drain it. I like to have a little bit to help flavor the soup.
  4. To the pot you just cooked the Sausage in add:
  5. -8 cups chicken broth ( if you do not have it you can substitute water, but broth tastes MUCH better)
  6. Cubed potatoes with skin on
  7. /4 Teaspoon Salt
  8. /4 Teaspoon black pepper ( if you want to spice up ad some red pepper flakes 1/2 teaspoon)
  9. Now add the drained, cook sausage back to the pot, and turn on medium heat.
  10. Slowing bring to a boil over medium heat
  11. Once it comes to a boil turn down to medium / low heat so it can simmer for 20 minutes
  12. While your soup in simmering, wash your Kale very well, it has lots of green leaves for dirt to hide in.
  13. Once you have washed it, take off the hard stocks, it is not very good for eating. You just want the Kale leaf. Then chop the kale into small bite sized pieces.
  14. You will need about 6 cups, uncooked.
  15. Once the soup has been simmering for 20 min, add the 6 cups of chopped kale, cover again and simmer another 30 mins.
  16. When the potatoes are cooked through, and right before serving turn off the heat, add the 3 cups cream and stir well as to not separate the cream
  17. You can top with a little bit of grated cheese, and enjoy!
