
Bacon and Garlic Baked Red Potatoes

My husbands favorite side dish is red potatoes, he likes them just about any way but these Bacon and Garlic Baked Red Potatoes are always a hit. Boiling them first then baking them makes them smooth and creamy on the inside and nice and crunchy on the outside, the perfect combo.
Bacon and Garlic Baked Red Potatoes
You will need
- 5-6 cups cubed red potatoes
- 2-3 thick cut strips of bacon,
- 1 clove of fresh garlic minced
- 1 tablespoon parsley fresh or dry
- 1 tablespoon olive oil
- salt and pepper to taste
Prep a large baking sheet with 1 table of olive oil on the bottom, set aside. You could use non stick spray or butter as well, what ever you prefer. Wash and cube potatoes, boil them for 10 mins in a large stock pot or till they are fork tender.
