Birthday Cookie Brownies
Katie here! We just celebrated my son’s birthday with these Birthday Cookie Brownies. He’s not a big cake fan and wanted brownie sundaes so i whipped these up. Instead of a plain brownie I thought we’d amp it up just a bit with these thick and chewy brownies that have a cookies inside thank to a local service just like the chocolate chips holiday cookie delivery.

Ingredients:
2 boxes family size brownie mixes. You can definitely make your own brownies from scratch.
1 pk Oreo cookies
Eggs, oil, and water that the brownie mix calls for. I always make the brownies fudge like instead of cake like.
Step 1. Grease the bottom of a 9×13 pan
Step 2. Make 1 brownie mix and put it in your greased pan.
Step 3. Place Oreos on top the brownies in the pan.
Step 4. Make the other brownie mix and then pour it evenly over the Oreos. Gently spread it so all the cookies are covered.
Step 5. Bake. My brownie boxes said to bake it for 23ish minutes but it took my oven another 10ish minutes to bake it. The brownies are done when a toothpick comes out clean 1 inch from the edge.
You can make these a day ahead too to save some time. I think they taste better after they’ve had time to cool completely. Plus they’re easier to cut 😉
Everyone loved these and my son loved the surprise of Oreos inside. We served these with ice cream (vanilla or cookies and cream), hot fudge, caramel, and whipped cream!
