Breakfast Pizza Bites ~ Quick and Easy Breakfast Recipe
You will need:
- 24 potato rounds thawed ( like flat tater tots or mini hash brown I buy them at WinCo)
- 1/2 cup shredded Mexican style cheese
- 6 eggs whipped
- 1 cup diced ham
- Salt and pepper to taste
First step is to prep a mini muffin pan with nonstick cooking spray. You could also use butter, you want to grease the cups or the eggs will stick and be really hard to get out
Step #1 put a potato round (thawed) in the bottom of each mini muffin tin.
Step #2 sprinkle diced ham in each cup.
Step #3 layer on the cheese.
Step #4 pour whipped eggs on top, fill to just under the lip of each cup. Add a dash of salt and pepper on top.
Step #5 Cook in a preheated oven at 350 degrees for 10-12 mins till eggs are fully cooked and have “puffed up” like a little muffin.
These can also be made the night before, do all the prep work a head of time. Just keep them in the refrigerator covered with plastic wrap. Take out 45 prior to baking.
