
Thanks to Purposely Frugal for passing along this recipe for Chocolate Zucchini Bread. Great way to use up the extra squash many of you have in your garden. Plus they look rather fancy… which is always fun
Ingredients:
- 2 cups sugar (I’ve done it with 1 3/4 just fine)
- 1 cup canola oil
- 3 eggs
- 3 teaspoons vanilla
- 2 1/2 cups flour
- 1/2 cup cocoa
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 2 cups shredded zucchini
Preheat oven to 350. Mix first 4 ingredients. Mix the dry ingredients separately. Then combine them and lastly mix in the shredded zucchini. Pour batter into 2 greased loaf pans and bake for 50-55 minutes. Then enjoy with a glass of milk!
