Thanks to Holy Craft for passing along this recipe for Gluten Free Corn Bread. Looks simple enough and yummy too! A warm slice or corn bread served with honey butter in one of my favorite treats! Here’s the recipe:
- 2 large eggs
- 1 cup rice milk
- 1/4 cup vegetable oil
- 1 1/2 cups yellow corn meal
- 1 cup rice flour
- 1/4 cup sugar
- 2 1/4 tsp baking powder
- 3/4 tsp salt
- 1 tsp xanthum gum
Heat over to 450 degrees. Coat 8×8 or 9×9 pan with oil. Beat eggs, stir in remaining ingredients. Batter should be creamy and pourable. If it’s too think, add 1-2 tsp of rice milk. Pour into prepared pan. Bake 20-25 minutes or until golden brown. Serve with honey. Enjoy!
