Healthy Halloween Recipes ~ Jack-o-Lantern Veggie Tray
Super easy, super fast, super cheap and super cute. Yes I used the word super 4 times, but I just love this fun veggie tray. It is a great way to get some good nutrition in your kids, and still have fun! Perfect for school parties, or a Halloween pot-luck.
To make this all you need is a bag of carrots, a can of olives and something green for a stem. For the stem I used the top of a green bell pepper, but you could use any green vegetable in its place. A good option would be celery, spinach, broccoli, sugar snap peas, or even kale.
I made the outline of the pumpkin first with the carrots, then made two triangles for the eyes. I filled the eyes in with black olives, then did the same for the mouth. I then started layering the rest of the carrots to fill in the rest of the pumpkin. It ended up being about 4 carrots high on all sides, and about 3 olives high. This would work well or a small group, if you have a large party you might want to make a larger pumpkin.
