Do you ever find yourself focusing on the things you feel you can’t do instead of the things you can?  I consider myself a pretty good cook, it is something I enjoy and normally do well.  I am not sure why but every time I try to make Lasagna it comes out AWFUL, yes flat out gross.  I finally just gave up about 5 years ago and have never made it again.  But I feel bad because I know Matt loves it….(well not the stuff I make, that is yucky).

If someone would say oh I have a great Lasagna recipe…. I would think I can’t make that and give up before I even tried.  Labeling myself a total failure in the lasagna department.

Well last month I went to visit my Sister.  She is teaching my 12 year old nephew to cook and he was in charge of making dinner that night.  Guess what he whipped up all by himself…. yip a perfect, yummy lasagna.  I was so impressed.  First that my cute little nephew is turning into a little chef, but second that he was able to master something I gave up on.

So I decided to give it another try, I ditched all the fancy recipes…..Instead I used the recipe on the back of the box of noodles.   I informed Matt that we may have to eat cereal for dinner as plan B, and went to work on making dinner.  It went together really easy,  I mean how hard is it right?  Meat sauce, noodles, cheese…repeat.  But I was terrified!

The timer on the oven went off and I was happy to see that it at least looked good….but was it edible?   Much to my surprise it turned out fabulous and was “almost” as good as my 12 year old nephews.   Matt asked for seconds ….so it was a total success!
