To be honest as a little girl fresh Green Beans made me gag, they were fuzzy, and just gross. BUT now that I am older they are one of my favorite veggies and I look forward to them every year. Yes, you can buy them at the store, but fresh from the garden is the best!
You will need:
2 lbs Fresh Green Beans Stems removed
1 med onion sliced
4 strips of bacon, chopped
1 tablespoon butter
4 tablespoons sour cream
salt and pepper
UPDATE: If you watched my live video you saw that I have changed the recipe some. I used frozen (fine) green beans. I also used 1/2 brick of cream cheese and 1/4 cup of heavy whipping cream to make the sauce instead of sour cream. These are adjustments we have made over the years that we found we like even better. Enjoy.
Makes 4-6 servings
If they are fresh from the Garden you will want to give them a quick rinse, to free and any “creepy crawly’s” and dirt.
You can either snap the ends off, or just chop them with a knife.
Add beans to a large pot of boiling water, with big pinch of salt. Cook for about 5 mins ( you want them crisp, but not raw). Drain and set aside.
Cook up 4 strips of bacon, till crisp…remove from pan, set aside. Leave half the bacon fat in pan to cook onions.
Add onions to pan and cook in the Bacon fat, over medium heat till they have started to caramelize
Return the green beans to pan, with butter and sour cream Stir till well coated, turn heat down to simmer and let the sour cream and butter blend and thicken (about 2-5 min)
