Stuffed Pork Chop Loaf ~ Only 3 ingredients
I have shared with you before one of our favorite family recipes stuffed pork tenderloin, but as you can see in the photo below getting the loin cut flat in a nice filet, then getting all the stuffing inside can be a bit of a challenge if you are not skilled with a kitchen knife. So I decided I would try something new. Same basic recipe but much easier to put together…. and that is how I came up with the Stuffed Pork Chop Loaf.
All you need to make this recipe is:
- 10 strips of bacon
- Box of Stove Top Stuffing prepared according to package directions
- 8 thin cut pork chops
- Meat Loaf Pan
Start by lining the bottom of the pan with your strips of bacon. Leave a long enough “tail” to loop over the top and cover the top. Next put a scoop of stuffing in the middle of a pork chop and start to stack it in the loaf pan. Sandwich the stuffing between the chops. Once you get them all stuffed, wrap the bacon over the top and tuck it into the side. It is important to use thin cut pork chops so the meat can cook evenly. Oven temp will vary and so will cooking time, I thought mine would take about 45 minutes to cook but ended up taking about 60 minutes to make sure the middle was done all the way. I also use a meat thermometer to make sure my meat is cooked. Pork should have an internal temperature of 145 degrees Fahrenheit before you eat it.

It was super easy to put together and the kids loved it 🙂 Only thing was it making sure the middle got done all the way, just took a bit longer to cook than I first estimated. But that happens when you just “make up” recipes lol
