If you like a good chip dip then this is a recipe you have got to try.  I had it for the first time about 15 years ago, it was a cold winter day we were getting together for a craft night with my cousins.  She pulled this hot bubbly chip dip out of the oven and we pretty much licked the pan clean… it was that good.  I told her I would love the recipe.  I was SHOCKED to find out how easy it was! I have been making it for social event ever since, and it is always a hit!

You will need

  • 1 80z brick of cream cheese
  • 1 can of Chili 15-19 oz(with NO beans) you just want meat and sauce
  • 2 cups grated Mexican blend cheese (or cheddar)
  • 3 green onions diced
  • 1/4 cup chopped cilantro
  • Corn chips to eat it with

In the bottom of a 9×9 pan spread the cream cheese in an even layer.  I use the back of a spoon, or just get my hand wet (prevents the cream cheese from sticking to it) and press into  an even layer.  Next open your can of NO BEAN chili spread in an even layer, top with grated cheese.

Put into  an 350 degree oven for 20 minutes or till cheese is totally melted and edges of the dip are bubbly. Take out of oven, sprinkle on the cilantro and green onions.  Serve with corn chips and watch it disappear 🙂

    Here in Las Vegas we have a Mexican Grocery Store that makes T Chips fresh !!!!! So we watch them come off the con aver belt fresh and hot then they bag them then we buy !!! It’s awesome !!
