What do you do with Large Zucchini? Make Zucchini Relish

Grind /  Grate  Coarsely:

  • 10 cups Zucchini
  • 5 cups Onions
  • 5 Tbsp Salt
  • 1 Red pepper – (green is good option too)

Let stand over night then drain, rinse and rinse again.

Then add:

  • 2 1/4 cups vinegar
  • 1 Tbsp dry mustard
  • 1 tsp Nutmeg
  • 3 1/2 cups Sugar
  • 1/2 tsp Black Pepper
  • 1 tsp  Turmeric
  • 2 tsp Celery Salt

Boil 30 mins or until tender,  put in a canning jar and place seal and ring on top. Yield 8 pints

If you grate small Zucchini use entire Zucchini. If you use large Zucchini just cut in half and with a spoon scrape out seeds.

You will need to water bath the jars for  for 15-20 minutes, take out and let cool on counter.  They will “pop and seal” as they cool.

Thanks to my Aunt Lawana who lives in the mountains of Cascade for this recipe.  She taught me to make it when I was first married and Matt absolutely loves it!  It is a great way to use up the zucchini that got away and are to large for other things.

Can you preserve this in a hot water bath or pressure cooker?

When you let it stand overnight, is it in the fridge or on the counter? This is our first time trying to make relish!!

This recipe is one that I have used for the last 25yrs that I have been married. I got it from my mother-in-law. And now I make it. Great to use in or on anything that you put relish in. If you have cucumber's that have gotten way to big. Look up a recipe called Cinnamon Cucumber rings. Uses cinnamon red hots for a syrup, yummy!! And colorful.
