Fall is here, which means everything pumpkin is on its way.  I happen to really enjoy pumpkin, so bring on the pumpkin recipe, pumpkin crafts, pumpkin decor and more.  My kids are like most kids and enjoy the sweet treats that come along with Halloween.  But I am not a fan of the sugar over load that turns my kids into crabby little monsters.  That is why I love this idea to make their sandwich festive and fun but a healthier choice too.

I created the Peek-a-BOO  pumpkin sandwich for my kids lunch.  Everything about it is fun and sure to make kids smile, when they open up their lunch to see this fun surprise.  It is fast and easy to make too.

Jif Whips  has a new Pumpkin Pie Spice Jif Whips that is seriously AMAZING!  Smooth and creamy, and almost melts in your mouth. I love slicing up a crisp fall apple and using it as dip. If you like pumpkin you have GOT TO TRY IT, you will thank me later!

But for this recipe I just used it in a the classic peanut butter and jelly sandwich.  I put the Jif Whips Pumpkin Pie Spice on  one side of the bread.  On the other side of the bread I used a small pumpkin cookie cutter to cut out the shape of a pumpkin.  The put jelly around it and put the two sides together.  Use sprinkles to fill in the pumpkin shape to make it look like a little pumpkin.

Healthy Halloween Treats, Jack O Lantern Quesadilla #Pumpkins, #Halloween, #HealthyTreatsJack-O-Lantern Quesadilla

Food that smiles at you is always fun to eat!  If you want to fill your families tummy with a quick yet healthy meal option on Halloween these are the perfect menu plan.  You can even cut out the face the day before, just keep them in a sealed bag, this makes them even faster to make.

Ingredients and Supplies

  • 2 tortillas
  • 4 slices of American cheese Or you can use 1/3 cup of your favorite grated cheese.
  • Knife to cut Jack o lantern face
  • Strawberry stem for garnish

Process
1. With a sharp knife, cut a Jack o lantern face into a tortilla. Discard cut out pieces.
2. Take another tortilla and cover it with 4 pieces of American cheese.
3. Place the jack o lantern tortilla on top of the cheese covered tortilla and microwave for 20 seconds.
4. Let cool for a few minutes.
5. Place a strawberry stem at the top for garnish.
6. ENJOY!

Recipe Yields 8 Chicken Cordon Bleu Hot Pocket

You will need:

  • 1 cup cooked shredded chicken
  • 1 cup diced ham
  • 1/4 cup green onions
  • 1/3 teaspoon garlic powder
  • 1 tablespoon parsley
  • 1 80z cream cheese softened
  • 1 cups italian blend cheese
  • 2 80z cans of crescent rolls
  • 1 egg whipped (for egg wash)

In a medium sized mixing bowl stir together the chicken, ham, onions, garlic, parsley, cream cheese and italian cheese.  Open up your can of crescent rolls.  Each can will come with 8 triangle shaped rolls, but you want 4 rectangle rolls. Take your fingers and firmly press the two triangles together to form 4 rectangle rolls.  Divide the chicken ham mixture in half, in the bowl.  Then divide each half into four parts. This will give you 8 portions (to put into your 8 rolls).

Place the chicken and ham mixture on one side of the crescent roll.  Take the other half of the dough and fold it over the top, use a fork to seal the edged and press the top and bottom of the dough together. In a small bowl whisk  egg with 1 tablespoon water, to create an egg wash.  Use a basting brush to brush the egg wash onto the rolls.

Ingredients

4 Roma tomatoes, ½” dice
½ Onion, thinly sliced
6-8 Fresh basil leaves, finely chopped
1 Tbsp. Honey
1 Tbsp. Dijon Mustard
1 Lemon, juiced
1 Tbsp. Red Wine Vinegar
½ teas. Garlic Powder
¼ teas. Salt
¼ teas. Black Pepper
4 Tbsp. Olive Oil

Instructions

Add the diced Tomatoes and sliced Onions to a medium size bowl.
In a small bowl add the Honey, Dijon Mustard, Lemon Juice, Red Wine Vinegar, Garlic Powder, Salt and Black Pepper. Mix well.
Slowly add the Olive oil to the small bowl whisking to incorporate.
Pour the dressing over the Tomatoes and Onions, toss to coat. Refrigerate until ready to serve.
Add the Basil and stir just prior to serving.
