Perfect for Thanksgiving breakfast! Wonderful companion to a cup of hot tea, in the morning!
Children will gobble up this delightful treat!
Supplies Needed:
- 1 cup of whole wheat
- ¾ cup of flour
- ½ cup of brown sugar (can use dark brown for richer taste)
- ½ cup of sugar
- 1 ½ tsps. of cinnamon
- 1 tsp. of nutmeg
- 1 tsp. of baking soda
- ½ tsp. baking powder
- dash of salt
- 1 egg
- 1 cup of canned pumpkin
- ¼ cup of milk (can use eggnog-adds richness or almond milk)
- ¼ cup of molasses
- ¼ cup of raisins
- ½ cup of chopped walnuts
(my daughter likes to add ½ cup of chocolate chips)
- 12 -cup muffin container. These muffins do not contain oil, you will need to spray the muffin tin pan with non-stick spray- the dough when baked will stick to the paper muffin cups. BIG MESS!Recipe revised from John A. McDougall’s “The Starch Solution”
Put all the ingredients into one large mixing bowl.
Stir until all the ingredients are moist.
Spoon mixture into 12- cup muffin tin.
Bake in a preheated oven on 375° for 25 minutes.
Let COOL and EAT!
