I found these Babybel Cheddar at my local Albertsons in their specialty cheese section. To make your own “cheese pumpkins” open the mini Babybel, it will have a plastic wrapper on the outside but it will also have a wax coating around the cheese. That is easily taken off by pulling the tabs found on the red wax shell. Push the parsley stem into the top to make it look like a pumpkin stem. If you want them to stand up cut a small slice off the bottom.

Serve alone or with meat and crackers. These would be fun to send in a school lunch, kind of like a Lunchable but a lot more fun!

Fresh Tomato and Mozzarella, healthy snacks that are quick and easy #Cheese, #Healthy, #Easy Recipes Are you looking for a quick and easy snack that is healthy… and taste good?

Believe it or not one of my kids favorite snacks is fresh tomatoes and fresh mozzarella cheese. Summer is coming to an end and we will miss this treat from our garden. We are just waiting for the first frost to come and then our tomato season will come to an end. Sure you can buy them from the store, but nothing taste like a tomato picked right from your back yard.

We have found we really like the fresh mozzarella balls from Culinary Circle, you can find them in the specialty bin section at Albertsons. I like that they are packed in their own liquid… i’m not sure if it is called whey …. somehow cheese juice just sounds wrong lol. So we will just call it whey, if I am wrong I am sure one of you fabulous readers will correct me :). Other brands sell them in olive oil we don’t care for that as much, they felt to heavy.

These make a great appetizer or snack. To make them all you need is fresh tomatoes and cheese. Top it off with salt and pepper. You can also add a small drizzle of balsamic vinegar and olive olive , if you want to make it all fancy.
