Deviled Eggs happen to be one of my favorite foods, when they are made right I can eat a whole plate of them (not that I have ever done that…lol).  It must be something in our family, because my little brother told his wife that deviled eggs are the perfect side dish, they GO WITH EVERY MEAL.  She thinks he is nuts, but I kind of agree with him.  If you do not share our love for deviled eggs, then maybe you are just looking for a great bbq side or holiday finger food idea… we still have you covered :).  These spicy deviled eggs are a great twist on the classic recipe.

Ingredients for Spicy Deviled Eggs :

  • 1 Dozen Hard Boiled Eggs
  • 1/4 Cup Mayonnaise
  • 3/4 Teaspoon Yellow Mustard
  • 1/2 Tsp Serrano or Jalapeno Peppers (Finely Diced)
  • 1/2 Teaspoon Garlic Salt
  • 1/2 Teaspoon Cayenne Pepper
  • Paprika (Optional)

Directions for Spicy Deviled Eggs :

Peel the hard boiled eggs then cut them in half lengthwise. Softly coop out the egg yolks and transfer them into a medium size mixing bowl.Add the mayonnaise, mustard, Serrano peppers, garlic salt and cayenne pepper and mash with a fork until fully combined. Taste to see if additional salt is needed. Place the mixture into a frosting bag or Ziploc bag (with the tip cut off) and pipe the filling into the empty egg whites. If you don’t have either of these items, just scoop the filling into the egg whites with a small spoon. Garnish with paprika and slices of Serrano pepper. Place the eggs on a serving tray and refrigerate until it’s time to serve. Hint for less spicy use jalapeno peppers instead.

Cookie Salad – Yummy Side Dish Or Dessert

I had a family bbq this weekend, and had to come up with a dish to bring with little notice.  Luckily, we have been making this salad for years, and it is always a hit wherever you bring it!

  • 2 cups buttermilk
  • 1 small box of vanilla pudding
  • 1 small container cool whip
  • 1 large jar mandarin oranges drained
  • 3-4 medium bananas sliced
  • 1 package pecan sandies cookies (If you have a nut allergy, you can get just sandies without the pecans)

Begin by mixing your buttermilk with your vanilla pudding mix and whisk until combined. Once combined add your container of cool whip.

Gently fold in your sliced bananas and drained oranges.

Now crush your cookies in a ziploc baggie.  They don’t need to be super fine, it is ok for there to be some chunks.  Once they are crushed, pour them into the salad.

Mixture will be fairly runny.  Cover and cool in the fridge to let it set up.  If you won’t be serving this soon, you can wait to put the bananas in until you are ready to serve.  Makes a large sized dish and serves several descent sized servings.  Can also be made lighter by using sugar free or light cool whips, and pudding mixes.
