I always struggle to find fresh, thrifty ideas for dinner and maybe you feel this as well.  The best part of all of this is that while I am sharing four recipes over the next three weeks, YOU will be sharing yours as well (remember the limit is 6 ingredients OR less), at the end of 3 weeks a winner with the best recipe will be chosen and they will win……………..a $600 AXP gift card.

Pork chops with onion gravy:

Pork chops (I used 7), you could use hamburger patties, chicken cutlets or beef steaks

season salt (or salt and pepper) to taste

2 Tablespoons flour for the gravy

Chicken broth OR boullion (about 4 cups)

1 Tablespoon Butter (NOT pictured)

1 onion (sliced in 1/2 rings)

This Brine is optional:

  • 2 Tablespoons salt to 4 cups water, soak meat in this mix for at least 30 minutes, drain and dry meat on paper towels before adding to hot oil!!!
Fry the brined OR season salted pork chops in oil (I used olive oil) until throughly cooked and browned, remove from pan
and keep warm in oven OR microwave.
In the same pan, saute the onions in the remaining oil and a Tablespoon of butter, remove when onions are browned and translucent, keep warm with the cooked pork chops.
In the remaining oils sprinkle your flour in the bottom of the pan and stir with a fork OR a spring stirrer, SLOWLY add about 4 cups of WATER with bouillon OR chicken broth stirring constantly! When you have a pasty consistency you can go a little faster adding liquid and incorporating it into the mixture until the gravy is the consistency you want.
****(A cheat I used to do until I became comfortable making flour gravy: put about 2Tablespoon cornstarch in about 4 cups liquid and stir completely (getting out lumps) and pour into the pan and slowly boil until it thickens to gravy)****
Plate a pork chop topped with onions and the gravy. I served mine with white rice and sauteed and seasoned zucchini and onions
