Pork chops with onion gravy:

Pork chops (I used 7), you could use hamburger patties, chicken cutlets or beef steaks

season salt (or salt and pepper) to taste

2 Tablespoons flour for the gravy

Chicken broth OR boullion (about 4 cups)

1 Tablespoon Butter (NOT pictured)

1 onion (sliced in 1/2 rings)

This Brine is optional:

  • 2 Tablespoons salt to 4 cups water, soak meat in this mix for at least 30 minutes, drain and dry meat on paper towels before adding to hot oil!!!
Fry the brined OR season salted pork chops in oil (I used olive oil) until throughly cooked and browned, remove from pan
and keep warm in oven OR microwave.
In the same pan, saute the onions in the remaining oil and a Tablespoon of butter, remove when onions are browned and translucent, keep warm with the cooked pork chops.
In the remaining oils sprinkle your flour in the bottom of the pan and stir with a fork OR a spring stirrer, SLOWLY add about 4 cups of WATER with bouillon OR chicken broth stirring constantly! When you have a pasty consistency you can go a little faster adding liquid and incorporating it into the mixture until the gravy is the consistency you want.
****(A cheat I used to do until I became comfortable making flour gravy: put about 2Tablespoon cornstarch in about 4 cups liquid and stir completely (getting out lumps) and pour into the pan and slowly boil until it thickens to gravy)****
Plate a pork chop topped with onions and the gravy. I served mine with white rice and sauteed and seasoned zucchini and onions

Healthy & Budget-Smart Stuffed Cabbage Rolls One Large Head Green Cabbage 2 lb. Lean Hamburger 1 c. uncooked brown rice 1/2 c. chopped onion 2 Large bottles V-8 Juice 1 Large can Sauerkraut (2 cans can be used if your family really likes sauerkraut) Mix hamburger, rice, onion, and 1/2 c. of the V-8 juice adding seasoning salt, paprika, pepper, and garlic salt to taste. Place 1/3 of the sauerkraut in the bottom of a large dutch oven along with 1/3 of the remaining V8 juice. Remove core from cabbage. Steam cabbage until leaves are softened and pliable. Remove one leaf at a time from the cabbage while still warm, cutting off the bulk of the spine. The spine trimmings can be added to the sauerkraut in the dutch oven, if desired. Place approx. 1/2 c. of the meat mixture into the center of each cabbage leaf and fold to seal in the meat mixture (like an egg roll.) Repeat until the bottom of the pan is filled. Add 1/2 of remaining sauerkraut and V8 juice. Repeat process, filling second layer and topping off with remaining sauerkraut and V8 juice. Remaining cabbage can be sliced and added on top, if desired. Salt and pepper as desired. Cover dutch oven and slowly bring to boil. Reduce to simmer and let cook for 1 1/2 hrs. Makes approx. 30 cabbage rolls. We normally serve with baked potato and cornbread.

Honolulu Chicken Serves 4-6 Chicken (approx. 3 lbs. boneless, skinless, cubed) 1 jar Peach preserves 1 cup BBQ sauce 4 Tablespoons Soy Sauce Onion (sliced) Green pepper (sliced) White Rice (cooked) Mix first 5 ingredients in 9x13 dish. Bake 350 degree for 1 hour. Serve over cooked rice. Yummy ~ we cut fresh pineapple for a side.

Beef with Parmesan Potatoes Ingredients 1/2 cup fresh flat-leaf parsley, chopped 1 tablespoon grated lemon zest 2 pounds beef tenderloin 4 tablespoons olive oil 1 1/2 pounds medium Red Bliss potatoes 1/4 cup shaved Parmesan Directions Heat oven to 400° F. In a small bowl, combine the parsley and lemon zest. Set aside. Season the beef with 1½ teaspoons salt and ½ teaspoon pepper. Heat 1 tablespoon of the oil in an ovenproof skillet over medium-high heat. Brown the beef on all sides, about 5 minutes. Transfer the beef to oven and roast, 18 to 20 minutes for medium-rare (internal temperature 125° F). Let rest for 5 minutes before slicing. Meanwhile, place the potatoes in a saucepan, cover with cold water, and bring to a simmer. Add 1 teaspoon salt and cook the potatoes until tender, about 15 minutes. Drain, divide among plates, and gently crush with a spoon to crack the skins. Drizzle the potatoes with the remaining 3 tablespoons of oil, ¼ teaspoon each kosher salt and pepper, and Parmesan. Serve with the beef. Top with the parsley.

Easiest, most delicious chicken recipe: chicken thighs or breasts (as many as you want to feed your family and have left-overs) 1 large red onion 2 red or yellow peppers 1 can black olives 1 large jar of your favorite salsa feta cheese Chop the onion and the peppers. Lay on the bottom of the pan, put the chicken on top pour the salsa and black olives over the chicken bake at 400 degrees for 1 hour. sprinkle the feta when the dish is done serve over rice. FABULOUS and so EASY

Potato Soup with Bacon (very thick and creamy, and I leave lots of potato chunks in it) 5 slices bacon 5 russet potatoes 2 cans chicken broth about a cup of half and half garlic and onion to taste I bake my potatoes first, sometimes the day before. Peel when cool. Chop bacon into small pieces and brown in pot. Remove from drippings and set aside. Simmer garlic (I use 3-4 pods, minced) and one chopped onion in bacon drippings until transparent, about 5 minutes. Next, add two cans of chicken broth and the potatoes that have been chopped into small pieces. I also add a bit of water to get he right proportion of liquid to potato. I let this cook for 45 minutes or so until the potatoes have started softening and dissolving. At this time I use a masher to mash until I get the consistency I want. I stir in half and half about five minutes before I serve, and I also add the crumbled bacon at this time.

This is so easy to make. I recommend not telling your guests what it is, they usually cannot guess! I like serving it to guests who say they hate olives just to see their reaction:) This olive spread that can be used in place of mayo in sandwiches, on crackers, veggies, you name it. Simply take a jar of pimento olives, cut them into fine pieces, and mix in 8 ounces of cream cheese. Depending on the your tastes you may add a dash of oregano or red pepper flakes, and VOILA! Pure bliss!

Tuna Casserole 1 small package wide egg noodles 1 can tuna- I like albacore 1 can cream of mushroom soup 2-4 cups shredded chedder cheese(depending how chessy you like it) 2 stalks celery chopped 1/4 inch square pieces Cook noodles and drain. Add tuna, soup, cheese, and celery, stir until combined (if too thick add a 1/4 cup milk). Place in casserole dish and sprinkle more cheese on top. Bake 350 for 15-20 minute until hot and cheese is melted.

PIZZA CUPS 3/4 lb ground beef pizza sauce onion, diced 1 can biscuits 3/4 c. mozzarella mushrooms or any other veg you prefer 1. Sautee onions till soft, then add beef. Brown and drain. 2. Blue Cheese and Asparagus Stuffed Chicken Breasts (I received this recipe from a friend) 4 slices bacon, cooked until crips and crumbled 4 Boneless skinless chicken breasts 12 Asparagus spears, washed and bottom end cut off 1 cup crumbled Blue cheese 3/4 cup flour Olive oil Pound chicken breasts until flat (about 1/4" to 1/2" thick). Place 3 aparagus spears on top of chicken breast. Tip with blue cheese and crumbled bacon. Roll chicken tightly over filling and secure with toothpicks. Put flour in a shallow dish, add a dash of salt and pepper. Roll chicken bundles in the flour. Put a few tablespoons of olive oil in a skillet and heat on medium-high. Brown the top and bottoms of the chicken bundles. Once browned, place the chicken in a baking dish and cover with foil. Bake at 350 degrees for 25-30 minutes.

Grilled Pork Tenderloin 1/2 c olive oil 2 tsp fresh rosmary chopped 1 tlb minced garlic 1 tsp salt 1 1/2 teaspoons ground pepper 2) 1 lb pork loins Add everything to a 1 gal plastic bag and let sit for at least 4 hours or over night. Heat grill to 350 and cook 25-30 min or to 145 degrees. Grilled veggies will compliment this dish well!

Curry Chicken 1.5lbs bone in chicken(whatever parts you like to use) 1 lbs bacon 1 tblsp curry 1/3 c honey a pinch of paprika Cook bacon in skillet, pull bacon out and set aside. Brown chicken in bacon grease, then put in a large backing dish. Set oven for 350. Mix honey, curry, and paprika, in a cup and then brush chicken with mixture lightly. Cover and Bake for 30min then put more honey curry mix on, Cook another 15 mins then glaze again, then another 15min. Then pull out of oven. Crumble bacon over top and serve. We love this curry chicken. We eat it every Easter instead of ham.

Homemade Sloppy Joes 1 medium onion, chopped 3 cloves garlic, finely minced 1 1/2 lb. lean ground beef 3/4 c. ketchup 1/3 c. plus 2 T. Worcestershire sauce 4 hamburger buns In a large skillet over medium heat, in 1 T. oil, cook onion & garlic 5 - 7 min. or until softened. Remove from pan. Add ground beef & cook 7 min. or until browned. Add onions & garlic back to pan. Stir in ketchup, Worcestershire sauce & cook until thickened, about 5 - 6 min. Season w/ salt & pepper. Serve on buns. If you like your Sloppy Joes sloppy like I do, you can add water to make your sauce a little more runny.

Lasagna 1. One can of Spaghetti sauce 2. One package of shredded Tillamook Mexican cheese 3. One package of shredded Italian cheese 4. One container of light cottage cheese 5. Whole wheat lasagna noodles Set the oven to 350. Get out a cake pan and spray it with cooking spray. Then put a little spaghetti sauce on the bottom and spread it all over. Then put a layer of noodles down, then put spaghetti sauce on top of noodles and then cottage cheese and spread them both and continue doing this until the last layer. Then put a little bit of either cheese on this layer and rotate both cheeses between each layer. The last layer of noodles put spaghetti sauce on and spread it all over and then put the last of both cheeses on top. Once done put in oven for 45-50 minutes.

Chicken Fettuccine Alfredo 8oz Medium-wide fettuccine noodles cooked 6 tablespoons real butter 1 1/2 cups of heavy whipping cream 1 cup grated Parmesan 3-4 garlic cloves (or more if you prefer!!) 2 seasoned, cooked chicken breasts cut into bite size pieces Melt butter in a wide frying pan with crushed garlic over medium high heat until the butter is slightly browned. Add 1/2 cup cream and boil rapidly until slightly thickened, then reduce heat to medium. Add noodles to the sauce and toss gently. Add 1/2 cup of Parmesan and 1/2 cup cream, toss and repeat with remaining cheese and cream. Add chicken and serve immediately. If you love broccoli too, you can add fresh broccoli to the pasta for the last 4 minutes and that is a super yummy addition! ENJOY!!

Spray muffin tin with cooking spray. Brown beef and season with salt and pepper. Drain. Cut wonton wrappers into circle shapes using a biscuit cutter or using the top of a drinking glass. You can cut several at a time. Reserve 6 tablespoons Parmesan cheese and 6 tablespoon mozzarella for the top of you cupcakes. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, Ricotta cheese, and mozzarella cheese. Top with a little meat sauce and marinara sauce. Use around 1-2 teaspoons of all the ingredients depending on your personal preference. Repeat layers ending with marinara sauce. Top with reserved Parmesan and mozzarella cheese. Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out.

Texas Caviar Salsa 3 cans of black-eyed peas (drain well) 1 can corn (white or yellow) 2-3 Tomatoes chopped 4-5 Green onions chopped 1 yellow pepper chopped 1 red pepper chopped 1 bunch of cilantro chopped 2 cloves of garlic mined 5 fresh jalapenos chopped 1 Bottle of Italian or Ranch dressing Mix all ingredients together and refrigerate overnight, or at least a couple of hours. Serve with tortilla chips.

Cheesy Chicken Spaghetti 1 can chicken breast chunks, drained 1 lb spaghetti 1 can rotel tomatoes 2 cups shredded cheese 2 cans cream of mushroom soup 1. Cook spaghetti as directed on package and drain 2. In large bowl, combine chicken, spaghetti, rotel, soup and 1 cup of cheese until well blended. Salt and pepper to taste 3. Spray bottom and sides of rectangle baking dish and full with mixture 4. Cover and bake in 350 degree oven for 20 minutes. 5. Add remainder of the cheese and bake another 5 minutes.

Cabbage Rolls (Halupkies) As a child my grandfather made them the best--then my mom--and now I am working on getting mine just as good for history's sake. They are so yummy-simple in idea-a little time to create--but oh so yummy and even better the next day warmed up. 1 large Head of cabbage 1 lb Ground pork 1 lb Ground beef rice (about 2-21/2 cups cooked) tomato soup (basic campbells-3-4 cans) salt/pepper Core and cook cabbage (I do this by turning it upside down in the microwave in a glass bowl with a pie plate on top holding it down)in a bit of water Brown meat and then mix with cooked rice. Add salt and pepper. Open the soup...dump a little on the bottom of the pot-large soup pot-to have a base on the bottom, I also place a piece or 2 of cabbage on the bottom of the pot to help prevent burning and sticking. When cabbage is cooled start assembling rolls-tear off a leaf, place a scoop of meat mixture onto center and roll. As you create cabbage rolls place them in the pot side by side; stacking as you go. When the meat mixture and cabbage are gone dump the tomato soup over the rolls until they are covered-add water as well...2 cans of tomato soup to 1 can of water. Be sure that there is plenty of soup. Add more salt and pepper (about a tsp) I always place a small dinner plate upside down on the top of the rolls to hold them down. Allow the pot to an easy boil and then turn back to simmer for an hour and a half. YUMMY. Enjoy

I've been enjoying this all summer. I usually make a big bucket of it so it's fast and easy for about 3-4 meals. It's healthy, filling and uses up all the veggies/fruit I get in my weekly co-op basket. Any kind of noodle (cooked) I usually use penne or rotini. quinoa (cooked- proportionally I usually like more noodles than quinoa) any bean (I like garbanzo beans) any kind of lettuce (red leaf, green leaf, iceberg, spinach etc) any kind of fruit/veggie (whatever is on hand/ diced) salad dressing (I usually use Ken's asian dressing) I usually like to keep this simple so the flavors aren't overwhelmed by to many things, so for instance my mix for this week has colorful rotini noodles, quinoa, garbanzo beans, iceberg lettuce, mango and corn. I usually do this all summer and then use the same idea with soups all winter. :) I save the meat and other dishes that take a while to make for special occasions.

QUICK SIMPLE DELICIOUS RECIPE!! Taco Ring 1 1/2lb ground meat 1 bag shredded cheese 1 1/2 packs of taco seasoning 2 tubes of pilsbury crescent rolls (favorite mexican garnishes) Brown ground meat. Drain. Add taco seasoning dry and stir into meat. Then add cheese into meat and stir until all melted. Lay out crescent rolls on pizza stone. wide end on the edge of the pan skinny tip pointing out. scoop meat mixture onto the wide ends all the way around. then take the small end and wrap it over and tuck it under the meat. after you finish all the points you will have a ring that looks like alternating pastry/meat. Bake for 45 minutes or until golden brown. I put lettuce in the center and then take three bell peppers and cut the top off of each and put guacamole in one, sour cream in the other and salsa in the other. great simple dish!!

Tomato sauce Parmesan cheese Vodka Fresh Basil Fresh oregano Penne pasta Penna Ala Vodka Sauce.... cook tomato sauce first for 3 hours then boil water for pasta & place in a baking dish add a little cream to sauce add a gigger of vodka, mix, pour over pasta & bake with cheese on top at 350 for 10 mins.

Easy Goulosh and Garlic Bread Ingredients: - 1lb ground beef - 6-7oz elbow macaroni noodles - 1 bell pepper - 1 onion - Garlic Bread (Texas Toast Frozen) - Ketchup (1/2 bottle) - I don't measure! Directions: 1.) Brown beef with chopped onion and chopped bell pepper. Set aside to drain. 2.) While beef is draining boil elbow macaroni noodles. 3.) When macaroni is tender drain water, add in beef w/ onion and pepper. 4.) Add Ketchup Stir well 5.) Cook Garlic Bread according to directions 6.) Dinner is served.

Shredded chicken sandwich 1large can cream of mushroom soup 2 Tbsp. Milk 1 cup crushed potato chips 2 cup shredded chicken Chicken broth Cook chicken and shred. Mix all other ingredients. You may need to add a little chicken broth. Bake at 300 degrees for 1 hour. Serve on your favorite buns.

Super Easy Yummy Pork You will need: 6-8 boneless porkchops One large can whole or diced tomatoes(I prefer whole) One can cream of mushroom soup Salt to taste Any preferred herb (I like Basil) And about 4 cups of cooked rice Okay so the rice in the picture isn’t cooked yet. You get the idea though. And here’s how you do it- Season pork with salt and basil. Place pork in baking dish. Cover with can of tomatoes. Pour in soup, mix it a little. You may want to use a larger baking dish than I did, one that your food will all fit in perhaps. Bake in 300 degree oven for about an hour to an hour and a half. About halfway through cooking mix it around so the soup and tomatoes come together to make a sauce. That’s it. It’s super easy and super yummy. I serve the rice on the side covered in the sauce.

Chicken with Roasted Vegetables Serves 4 4 chicken legs, skin on 2 lb small potatoes such as Yukon Gold 3 bell peppers (color is not important but green does not cook as well this way as the other colors) 2 red onions 1 or 2 bulbs garlic, quantity is up to you Olive oil Optional - Italian seasoning/Herbes de Provence/whatever else you have in your cupboard :) 1. Dice the potatoes - leave the skin on 2. Deseed the bell peppers and chop into thick slices, or chunks 3. Peel the onions and cut into wedges, you will probably end up with around 16 wedges 4. Don't peel the garlic, just separate the cloves and chop the ends off each individual clove so they will roast in their skins. 5. You will need two roasting pans - place half the vegetables in each roasting pan, drizzle olive oil over them, and toss vegetables to coat. 6. Place chicken legs amongst vegetables, two each roasting pan 7. If using herbs, shake over a generous amount of whatever dried herbs you are using, I have never really measured but I think I probably use a couple of teaspoons. 8. Roast in the oven at 400F for around an hour Garlic is lovely and mild when it is roasted in its skin. Taking the ends off each clove before roasting lets you squeeze out the roasted garlic pulp from each clove by pressing down with your knife or fork. Less of the usual garlic after effects too!

Ham Casserole 1/2 lb. of ham chunks 1 1/2 cups of cheese 2 cups of noodles cooked 2 cans of cream of mushroom soup 1 cup of sour cream (If want could add 1 medium onion or green pepper diced,We don't) Mix all ingredients together and salt to taste put in a casserole dish and cover. Cook 375 for 30 minutes until bubbles. Very easy and very yummy! One of my kids favorites.

Summer Garden Feast Kabobs 1 lb. beef, thawed, cubed, marinated over night 3 red bell peppers cut in squares 3 yellow bell peppers cut in squares 3 green bell peppers cut in squares cherry tomatoes zucchini, unpeeled, and sliced Use bamboo skewers presoaked in water. Load ingredients on skewers, making a pattern of your choice. Or do meat every other ingredient. Husband likes that. Put on grill or on broiling pan in oven and broil or grill for 15 minutes. Turn halfway through and brush vegetables with butter. Enjoy. Rinse and repeat for next night. (The zucchini and vegetables are very filling, even without the meat.)

Rice Krispie Chicken Enough Boneless/Skinless Chicken Breasts to feed your family Onion Butter Rice Krispies Cereal -Thinly slice onions and line the bottom on a glass baking dish -Melt Butter and roll the chicken breasts in the melted butter -Roll buttered chicken in the Rice Krispies Cereal until well coated -Place cereal coated chicken on top of the sliced onions in baking dish -Bake at 350-375 degrees (depending on how your oven heats) until no longer pink in center and juices run clear. Rice Krispies will get a golden brown color. This recipe is excellent just as it is, but one extra step you could take to add more flavor is before you roll the chicken in the melted butter you could roll the chicken in flour with some salt & pepper added to it. You could also add a seasoning packet to the flour mixture (like Hidden Valley Ranch mix). I've recently done this with a different recipe and it would work well with the recipe above too!

Chicken Roll 8 oz cream cheese 1 package dry ranch dressing mix 3-4 chicken breasts, cooked and shredded Rhodes frozen rolls Thaw frozen rolls for a couple hours so you can work with them. Soften cream cheese, mix ranch dressing mix in. Stir chicken into mixture until well mixed. Flatten one roll, put heaping tablespoon or so of mixture on roll, place another flattened roll on top of it and seal it together. Placed on greased dish and bake for 15-25 minutes at 350 degrees.
