Last month I posted a recipe for Fried Zucchini, it was well received but a few o you wanted a baked recipe instead. The recipe varies a bit… the main difference is how I cut the zucchini and how it is cooked.
For the recipe you will need
- 2-4 small zucchini
- 2 eggs
- 1/4 cup milk
- Progresso bread crumbs
- Salt and Pepper
- Garlic powder
- 2 tablespoons olive olive (to grease the pan)
Then take the zucchini spears from the egg wash and roll them in Progresso Italian Seasoned bread crumbs.
Place them on a greased baking sheet. Bake them at 425 degrees for 25-35 minutes till tender.
Baking time will vary on oven, and size of the spears. Enjoy!
