Banana Pecan Lime Cake

I was looking for a way to use up my bananas that had turned brown and decided to alter my apple cake recipe and use bananas and lime instead.  It turned out great, even the kids liked it. If you find you do not have enough bananas to make the recipe you can make up the difference with apple sauce or chopped apples.

Dry Ingredients

  • 3 cups flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cups sugar
  • 1 cup oil
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • zest of one lime and 1 tablespoon lime juice
  • 3 cups mashed bananas
  • 1 cup pecans chopped

Start out by mixing your dry ingredients together and set them aside.  In a large bowl you will want to add your  sugar, oil, eggs and milk  cream them till they are well blended.  Add in your dry ingredients one cup at a time.  Stir on medium speed for 2 minutes.  Fold in your vanilla, lime, bananas and nuts.  Pour batter onto a greased pan, and spread in an even layer, bake at 350 for 25-30 minutes till toothpick comes out clean.  If you bake in a 9×13 dish increase cooking time to 30-35 minutes.  Allow to cool, then frost.

Frosting recipe

  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/2 tablespoon lime zest
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla

Let your cream cheese soften (or you can toss it in the microwave for about 15 seconds if you are in a hurry). Cream the cream cheese and sugar, add vanilla and lime.  Add milk till desired consistency is achieved.  Wait for cake to cool and frost.  Enjoy
