Blueberry Orange Muffins Recipe
In a bowl mix,
- 3/4 cups softened butter
- 1 (8oz) cream cheese softened
- 2 cups sugar
Mix till well blended then add
- 2 large eggs
- zest from 2 medium oranges
- 1/4 cup plus 1 tablespoon fresh orange juice with pulp
- 1 teaspoon vanilla
In another bowl mix dry ingredients
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Once you have the dry ingredients mixed in, fold in 2 cups (24 oz) fresh blueberry’s. Be gentle so they do not break and turn the batter blue.
Slowly add to wet ingredients, Don’t over mix it… Spoon into muffin tin with paper liners or greased cups. Yields 24 muffins. Bake the muffins at 350 degrees for 25 minutes. Test it with a toothpick if it pulls out clean it should be done. Enjoy!
