Emerald Mint Milkshake
Prep Time: 5 minutes

  • 1 pint (2 cups) vanilla ice cream
  • 1 cup milk
  • 1/2 teaspoon McCormick ® Pure Peppermint Extract
  • 1/4 teaspoon McCormick® Green Food Color
  • Whipped cream and green sprinkles (optional)

1. Place ice cream, milk, peppermint extract and green food color in blender; cover. Blend on
high speed until smooth.
2. Pour into glasses. Top with whipped cream and sprinkles, if desired. Serve immediately.
Makes 3 servings.
Test Kitchen Tip:
For easier measurement, 1/4 teaspoon Food Color = 20 to 25 drops.

If you’ve been doing the 7-day challenge, hopefully your marriage has a bit more sparkle to it.  I hope you’ve been smooching, leaving love notes, planning for a great Valentines Day, focusing on the good in each other, calling just because, and remembering all the love you’ve shared together!

Now, it’s Valentines Day.  And you may be asking, “What about me?!?!”  It is natural when we try to improve our relationship to expect the same in return.  We may even begin keeping a mental tally chart and run a dialogue in our heads that may sound something like this: “I made an effort to thank him for putting the kids to bed and I did the dishes by myself and I left a love note on the mirror and I tried so hard not be a nag. He owes me big today.”  The problem is, when both partners focus on themselves and try to grab their fair share of the pie, they usually walk away as hungry as before.

There’s a place for long, heartfelt, conversations about division of labor.  There are appropriate times to express our own needs and help our spouse love us better.  But most of the time, we love because our spouse needs loving, we are kind because kindness is good for our souls, and we continue building our marriage because it is worth it.  Luckily, that circle of service will usually come right back to you.  But for today, give a gift and watch them smile without looking for your package.  Give a sincere compliment without waiting for one in return.  And love with all your heart, without keeping score.

One of the most powerful forces for good in a marriage is our memories.  When things aren’t going well, sometimes remembering why we fell in love, what we admired about our spouse, and how we’ve made it through hard times before can help us work through current troubles.  Dr. John Gottman advises couples to increase their admiration for each other by often revisiting those happy memories.    The task for today is to talk together about some of the happy times you’ve shared.  If you are doing the challenges alone, write them down in your journal, or share part of the story with your kids. Here are a few of his questions:

1. Discuss how the two of you met and got together. Was there anything about your partner that made them stand out? What were your first impressions of each other?

2. What do you remember most about your first date and the period of your new relationship? What stands out? What were some of the highlights? What types of things did you do together?

3. Talk about how you decided to get married. Who proposed and in what manner?

4. How well do you remember your wedding? Talk to each other about your memories. Did you have a honeymoon? What was your favorite part of the wedding or honeymoon?

5. Looking back over the years, what moments stand out as the happiest period in your relationship? When was a good time for you as a couple?

Think about the first time you saw your spouse while you fold the laundry.  Dwell on those first exciting kisses while you do the dishes.  Bring up some old memories while you’re driving in the car.  Tell a funny story from the past at dinner.  Tuck your children in to bed with the most wonderful love story of all…yours.  And notice how those memories perk up the past, revitalize the present, and help you remember there are oh-so-good days ahead.

Make this years Valentines Day special without breaking the bank.

Tomorrow is Valentines Day! Do you need a last minute idea to make the morning special? Whip up a batch of pancakes and pour the batter into a heart shape… simple but a cute way to show a little extra love!

I made these into Cranberry Orange pancakes by mixing up the normal package direction then adding crasins minced with a knife and the zest from one orange, and 1/2 teaspoon vanilla.  Simple way to make a plain pancake extra tasty!

Your task for today is simple…call your sweetheart and tell them you love them.  If they don’t have easy phone access, you can opt for a text or email, but try for the real thing.  There’s nothing like an unexpected phone call just to say “I love you.”

Little things like this take almost no time, but they create a happy marriage culture.  Life is busy, but you can always carve out a couple of minutes for your love.
