There is almost nothing better then Girl Scout Cookies. I just love each cookie. The Samoa’s, Tagalongs, Toffe-tassic, and even the Cranberry Citrus Crisps. One type of cookie I always get and buy enough of to hide them away for the rest of the year are Thin Mints! Girl Scout Cookie Thin Mints are one of the best cookie recipes around! So simple but so good! Not only is the cookie great but so is the recipes you can make with Thin Mints! There are all kids of recipes to make with Thin Mints, from savory dishes to fantastic desserts.
The Girl Scout cookie recipe I love best is the combination of Thin Mints and pudding or custard. Add the two together and you get a delish Thin Mint Grasshopper Pie recipe! An easy Girl Scout Cookie recipe that can be made ahead of time and put away in the fridge till the party starts! Great for kids at birthday parties, St Patrick’s Day parties or even nice evening parties with friends!

Girl Scout Cookie Recipe  Thin Mint Grasshopper Pie

Ingredients:

  • 2½ cups Thin Mints finely crushed
  • 3 cups mini marshmallows
  • ½ cup milk
  • 1 teaspoon mint extract
  • 6 drops of green food coloring
  • 1½ cups heavy whipping cream
  • chocolate sprinkles
  • 4-6 small glasses

Directions:

We used food processor and coarsely ground the Thin Mint cookies until finely crushed. You can also do this by placing the cookies in a ziplock bag and then using a cookie color ad crushing the cookies.

 

In a medium saucepan, melt the mini marshmallows with the milk over low heat. Once all the mini marshmallows have melted, place marshmallow mixture in fridge for 10 minutes to set.

Once the marshmallow mix has cooled and set, stir in the mint extract and a 2-3 drops of green food coloring. Place this mixture to the side to do the next step.

Use an electric mixer, whip the whipping cream until soft peaks form.

Add the crust evenly by spreading the cookie mixture into the bottoms of your glass I like mine firm so pack it down.

Now add the mint mixture on top of the cookie crust, filling each glass 3/4 of the way.

Top the pies with a dollop of whip cream, and some chocolate sprinkles.

Chill in fridge for at least 2 hours before serving.

We all love Girl Scout cookies and especially Thin Mints. Now you can take your favorite Thin Mint cookie and make it into a yummy Grasshopper Pie Dessert!

Ingredients

Fourteen years ago at around this time of year I was busy trying to find a someone. Getting the guts up to ask a curly brunette out on a date was an incredibly tough thing. What made it hard was after you said no. Yup turn downed. I went along with your excuse and gave you the benefit of a doubt. So I fought back the first rejection to once again ask you out again. Only to be rejected again. By this time I became more frustrated then totally and ultimately rejected. Although it was far worse the second time. Luckily for me I had a recent self realization to enable a baseball mentality to dating. Before I even asked you to go out on a date I started the “three strikes your out” program. I would give girls three chances before they were knocked off my list. You were on strike two. So there we were, two strikes and we still had to see each other every day at the same dealership that we worked at together. So not long after the second strike I caught you walking up to the front office and caught you and asked again. Sure everyone by now is thinking oh just give the guy a mercy date. But what did you say – NO! I instantly reacted and told you you just got your third strike. After your confusing look I explained my Three Strike Your Out Program, and you then quickly said “Well Maybe.” Maybe go out with me after three strikes? So I told you that I would give you 2 3/4 strikes and we planned a date on another day then the one I just asked.
You were confused as to why I kept asking, thinking I wasn’t interested in the cute country farm girl. So the date was to a collage theater play where we went to and we both realized there that it was love on Third Strike. Later learning from you that you knew that night that you felt the same as I did that night. All to only see us engaged three months later and married in August of that year. Fast forward over 14 years, you are still the one I would ask out again and again. After all the things we have been through both rough and fun, we still snuggle up at night. Even if we are fighting off 5 kids. ;)

Prior to that first date together I had hoped to find you for a thousand years. So as we continue to grow and evolve together, just like our first date, where we know we will be together for a thousand years more.

Mine do, and I think it is adorable.  They often leave me “Polka Dot” cards. These are easy to make, low cost and fun for kids of all ages.  Today my 4 year old spent a few hours makeing Polka Dot Heart Cards, he plans to give them as Valentines but these work well for other occasions as well. Like Mothers Day, Fathers Day, Get Well Cards, Thinking of you Cards…. the list goes on and on.

To make these first you will need:

In this card we picked a heart.  I used an old Christmas card ( I like to use thicker paper or cards so the paint or ink does not bleed through).  I then tape the heart to the middle of the white cardstock. Pour some paint out on a plate and use the pencil eraser to make dots around the heart.  It does not mater where you put them.  My son LOVES to make the dots it keeps him busy for a very long time often over an hour. He often sings “Dip, dot, dip Dot” as he makes his card, which I think is adorable.

Careful not to smear the dots. Allow to dry, then use glue to make a card out of your new image. My kids often write a message in the middle of the card too.

Another idea, you can do this same project with a pillow case, or t-shirt. Just make sure you use fabric paint and heat set it before you wash it.

Quickly press it down on the paper to create a finger print.  You can do them all the same color or mix it up as seen in the photo above. Start with the lighter color so you do not have to clean the finger off as mush between prints.

Allow the paint to dry. Then use the sharpie marker to draw faces, arms and legs on them.  Layer on scrapbook paper or cardstock to create a custom card.

M&M Valentine Jar Materials ­

  • 1 large bag of Valentine M&M’s
  • Printable gift tags
  • 16 oz mason jars
  • Twine or ribbon
  • Single hole punch

Directions ­

#1. Wash and dry the jars.
#2. Once the jars are completely dry, pour the Valentine M&M’s in the jar filling all the way to the top.
#3. Close and seal with the lid.
#4. Print and cut out the gift tag, use the single hole punch and then string the twine or ribbon through and attach it to the gift jar.
