Deviled Eggs happen to be one of my favorite foods, when they are made right I can eat a whole plate of them (not that I have ever done that…lol).  It must be something in our family, because my little brother told his wife that deviled eggs are the perfect side dish, they GO WITH EVERY MEAL.  She thinks he is nuts, but I kind of agree with him.  If you do not share our love for deviled eggs, then maybe you are just looking for a great bbq side or Easter picnic idea… we still have you covered :).  These spicy deviled eggs are a great twist on the classic recipe.

Ingredients:

  • 1 Dozen Hard Boiled Eggs
  • 1/4 Cup Mayonnaise
  • 3/4 Teaspoon Yellow Mustard
  • 1/2 Teaspoon Serrano or Jalapeno Peppers (Finely Diced)
  • 1/2 Teaspoon Garlic Salt
  • 1/2 Teaspoon Cayenne Pepper
  • Paprika (Optional)

Peel the hard boiled eggs then cut them in half lengthwise. Softly coop out the egg yolks and transfer them into a medium size mixing bowl.Add the mayonnaise, mustard, serrano peppers, garlic salt and cayenne pepper and mash with a fork until fully combined. Taste to see if additional salt is needed. Place the mixture into a frosting bag or Ziploc bag (with the tip cut off) and pipe the filling into the empty egg whites. If you don’t have either of these items, just scoop the filling into the egg whites with a small spoon. Garnish with paprika and slices of serrano pepper. Easter snuck up on me this year… I can not believe it is almost here. This recipe is one of my favorite “last minute recipe” ideas.  I always keep a brick of almond bark in my freezer just for this reason. You can add just about anything to it, and it is delicious! Some of my favorite things to mix in with it is pretzels, nuts of any kind, popcorn, sunflower seeds….. or you can just melt it and add some adorable candies on top. You can make it last minute or a few days before the party, just beware that it will be gobbled up quickly :).

Ingredients

  • 24 oz. Almond Bark
  • 1 ½ – 2 Cups Sixlets Candies (or more if desired)

Melt the almond bark in a microwave safe bowl 50% power for 2 minutes, stir. Then 50% in 1 minute increments stirring after each until smooth. Pour into a 13×9 inch pan lined with parchment paper. Evenly distribute the Candies over the melted bark, press lightly to make sure they don’t fall out as easily when you break the bark. Let set at room temperature at least 1 hour. Gently break into desired size pieces working from the corners inward. Store in an airtight container.Almond Bark Easter Recipe, Sixlets Candy Easter Bark, last minute easter treat ideas, SO easy to make and looks so fun, spring recipe

Also, I’m by no means an expert at sewing! I know how to use my machine and that’s about all! If you are familiar with your machine, you’ll be able to make these!

-You need

  • 9×12 Sheets of Felt, at least 2 of the same color.  2 sheets for one bunny. Two sheets of felt will actually make 3 bunnies (see image below)
  • Thread to match your felt
  • Push Pins
  • Sharp Scissors
  • Pattern (printable link-make sure you uncheck the “fit to page” or “scale to fit” option in Acrobat when printing your pattern)
  • Fiber Fill/Batting
  • Unsharpened pencil, Popsicle stick, bbq skewer or something equivalent (optional but very helpful)
  • Ribbon in your color choice

1-Cut out pattern. There are two sizes of bunnies, large and small.
2-Place two sheets of felt, wrong sides, together.
3-Pin your pattern on the felt and cut out bunnies. When finished, remove the pattern and pin the two pieces of felt together.
4-Sew your bunny together, leaving about a 2″ opening at the bottom to fill. Be sure to back stitch your work so the thread does not unravel.

5-Trim excess pieces of thread.
6-Stuff bunny with fiber fill. Use small pieces at first and use an unsharpened pencil to stuff it into the ears and head. Fill it up and make it nice and firm so your bunnies stand up.
7-Sew the bunny shut (you can pin it first if that helps you). Back stitching to keep thread in place. Trim excess thread.
8-Your bunny may have uneven edges, because if you’re like me, just dangerous enough to sew, but by no means an expert, the bunny won’t be perfect. You’ll want to use a pair of sharp scissors to trim the stitched edges to have a uniform edge and trim off the uneven felt.
9-Add ribbon to your bunny’s neck and enjoy!

Spring is here and Easter is on the its way, which means it is time to make Bunny Bottom Cookies.  These are so cute and always a favorite …but super easy to make! You can make the cookies from scratch from the recipe below….or if you are in a hurry you can just use the refrigerated sugar cookie dough from the store.

Yield: Makes about 2 dozen cookies

Ingredients:
1-1/3 cups and 1 tablespoon all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup butter, softened
3/4 cup white sugar
1/2 teaspoon vanilla extract

1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonful of dough into balls, and place onto ungreased cookie sheets.

3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

4. In medium microwavable bowl, stir frosting and 1 to 3 drops pink food color until well blended. Microwave uncovered on High 10 to 15 seconds or until soft but not

5. To make bunny bottom, frost 1 whole cookie slice and 2 bunny feet with frosting. Place bunny feet on bottom of cookie. Place 1 marshmallow in center of each cookie for tail. Decorate bunny paws with candy sprinkles or frosting. Repeat with remaining cookie slices and bunny feet.

How to make cake pops ~ DIY Easter Bunny Recipe Ideas, Easter treat ideas, School party ideas for Easter

DIY Easter Bunny Cake Pops

I am not sure who invented cake pops or cake balls…. the whole process seems kind of backward. Bake a pretty cake then crumble it into bits and then roll those bits with frosting and roll into balls.  I assume someone dropped a cake or a kid ate a whole in the middle of a cake… and in desperation cake balls were invented.   But they sure are a fun way to eat cake. I love that you can make them ahead of time and freeze them till you need them. Yhey make for easy menu or party planing.

Yields: 40 cake balls, Ingredients:

  • 2 12 oz. packages of white chocolate chips
  • 1 box white cake mix (plus required ingredients)
  • 1?2 cup vanilla or cream cheese frosting
  • 1 bag large marshmallows
  • 40 mini marshmallows
  • Pink sugar sprinkles
  • Pink heart shaped sprinkles
  • 1?2 cup chocolate chips
  • sucker sticks if you want to turn these into pops

Directions:

1. Prepare and bake cake as directed on box. Let cool completely.

2. Crumble cake into a large bowl. Add frosting and mix thoroughly (it may be easier to use fingers to mix together)

3. Roll mixture into 1” balls. Chill in the refrigerator for approximately 1 hour (or freezer for 30 minutes).

4. Cut the edge of a large marshmallow diagonally in the shape of ears. Place the sticky side of the marshmallow into a bowl of pink sugar sprinkles.

5. Roll mini marshmallows in hands to create a ball that will be the bunny tail.

6. Once cake balls are cooled, melt white chocolate according to package directions. Using a fork, dip and completely coat cake ball. Let the excess drip off and place on a wax lined baking sheet.

7. Quickly, before white chocolate dries, place 2 marshmallow pieces (ears) on top of the cake ball, and hold in place until the coating sets. Then stick one heart-shaped sprinkle on the front of the cake ball for the nose, and a mini marshmallow tail on his behind. Repeat until all cake pops are used.

8. Melt chocolate chips in microwave. Place melted chocolate in a bag with a very small round frosting tip. Draw two dots for eyes.

Rainbow Goody Bags, Made From a Coffee Filter!

Here is a great last minute goody bag idea.  This would be great for classroom handouts for Saint Patrick’s Day, a child’s birthday party or any event that rainbow goody bags would liven the day!

You will need

Coffee filters

Markers (not Sharpie or permanent)

Squirt bottle of water

Something to set the coffee filter on to protect your table top

Candy for the inside

Twine, string or ribbon to tie bag shut

Color in sections of your coffee filters.  Doesn’t have to be super clean or perfectly colored, the water will help hide all of that.  If you are doing rainbow colors you will want to go in rainbow order (red, orange, yellow, green, blue, purple)  I left out indigo, I didn’t have one that color.

Once you color in sections and your coffee filter is covered in marker, take your water bottle and lightly mist the coffee filter.  Be sure there is something under your coffee filter so that there is no marker or water on your table top.

The water will help the marker to run and the colors will mix on the edges.  It will also help the colors smooth out hiding all of your marker lines.  Turns out really lovely!

Let it set out and dry.  Once it is completely dry you can wrap a couple of wrapped candies in the middle and tie it with a small string.

I would be sure that the candy is wrapped.  I am sure if you use nontoxic markers you would be completely safe, but just to be on the safe side, I recommend sticking with candies in wrappers.  For Saint Patrick’s day I put some Andes mints inside.  Some gold coin chocolates, or skittles would also be great!
