Cheesy Cauliflower Recipe

This recipe may not be for everyone, but if you like cooked Cauliflower you may want to try it.  My Dad taught me to make this when I was a little girl, and I have always loved it.  My kids now love it too.

Break 1 small Cauliflower head up into bite sized pieces, and steam till fork tender.  You can steam them on a stove top, or in the microwave.

In a bowl combine,

  • 1/4 teaspoon yellow mustard
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/3 cup Mayo
  • 1/3 cup Sour Cream
  • 1 cup grated cheese (leave a little for the top)

Add Cheese mixture to cooked Cauliflower in a microwave safe bowl.

Combine and top with cheese.

Cover with lid and cook for another 2 minutes, on high.

I have a similar recipe that I discovered when I was doing the Adkins diet. It’s a great, healthy substitute for mashed potatoes. Add some chopped green onion, some chives, a little crushed up bacon, and some sliced black olives, if you wish. It’s yummy!

When my daughter was about 5 we had some “loaded” mashed potatoes in a restaurant, and she proclaimed that mine are better! I had her completely fooled back then. :-)

We normally use cheddar cheese, but in the photos is a mexican blend ( just what I had on hand)
