Cole Slaw is really easy to make, great as a side dish or on a pulled pork slider. I love cabbage and adding the lime to this recipe really gives it a nice fresh taste. You can make it and eat it right away or make it ahead of time and let the flavors blend before serving.
You will need
- 1 large head of Cabbage thinly cut and chopped
- 1/2 cup grated carrot (diced)
- 1/4 cup minced onion
Sauce
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup milk
- 1/2 cup mayonnaise
- 2 Tablespoon apple cider vinegar
- zest of 1 lime (1 tablespoon fresh lime juice)
Toss, cabbage, carrots and onions in a large mixing bowl. You can use green or purple cabbage, for the photos I used half and half cause I think the purple is pretty… but it will turn your cole slaw a bit of a pink color the longer it sits.
In a small bowl, mix sauce ingredients till well blended. Pour over the top of slaw, stir till well coated.
Cover and chill in the refrigerator for a few hours before you serve.
