DIY Cake Mix Recipe

Last week, I was trying to make a cake last week  and I realized I was out of cake mix. I know how to make cake from scratch…it’s just that I really, really like those little boxes that take two minutes, two ingredients, done. So…I thought…I could totally make those on my own!

Here’s the recipe I used, but I am certain you could use almost any cake recipe you love!

Chocolate Cake Mix

3 cups of flour,
2 cups of sugar
8 tablespoons of cocoa
2 teaspoons of baking soda
2 teaspoons of salt
Mix and add to a plastic bag. I made up several bags so I would have them next time I was in a cake making mood.

Label the outside with the wet ingredients needed

2 cups of cold water
2 teaspoons of vanilla
2 tablespoons of vinegar
3/4 cup of oil

Bake for 25-30 min. at 375 degrees

to make white omit the cocoa?

You can find recipes for almost anything made without eggs. I also like that it doesn't have those yucky pho's like store bought cake mixes. Thanks for sharing this one!

When you make it what temperature should i put the oven on? Also do you know where i can find a DIY frosting recipe.

I love the fact that the homemade version has no partially hydrogenated oil! I don't like to buy anything that has it!

On pan size, my guess would be a 9x12. The recipe I have calls for about half as much flour, sugar, etc. and makes an 8x8.

My mom used to make a similar cake. It's called a "wacky cake" and it does not have any eggs in it. I haven't made it in a long time, but I loved it as a kid!

How many cakes does this make, and what size pan do you use? I would think that whether you use cake flour or not as far as the amount- and I am too surprised that there are no eggs in the recipe. Also, instead of the oil, I would use applesauce- less calories, and the cake will come out just as light...Or use half of the oil/half applesauce, even. Thank you for posting this idea! I love your blog site, by the way.

Curious. If one uses cake flour instead of regular flour, would you use the same amount, more or less? Do you know? And I'm suprised to see no eggs in here. :)
