fruity pasta salad

I attended a church function several years ago and a woman brought this wonderful salad. She didn’t have an official recipe, but then again it’s so easy, it doesn’t really need one. I created my own here and have made it dozens of times for my family, for potlucks, barbecues, etc. Everyone loves this light, fresh and fruity salad! It’s easy to make, saves well and is inexpensive. 

Feel free to substitute different items to use what you have on hand. Toss in the leftover grilled chicken from last week’s dinner, cut into chunks. Once, instead of mayo and sour cream, I used homemade plain yogurt and it was incredible! Strawberries would be a yummy addition as well.

Fruity Summer Pasta Salad

  • 1/2 package of bow tie pasta, cooked according to package directions
  • ¼ cup light mayo
  • ¼ cup sour cream
  • 1 can chicken, shredded {can use any size 12-18 oz}
  • 1 can pineapple tidbits
  • 1 apple, diced
  • 2 cups red grapes
  • Salt to taste
  • Few dashes of onion powder, if desired {I use a few shakes of this McCormick All Purpose seasoning blend where the main ingredient is onion powder.}

Directions:

Cook pasta according to directions on package. Rinse with cold water until pasta has sufficiently cooled. Drain pasta well. I even lay out 2 paper towels and spread pasta on top, then blot with more paper towels. 
To save even more time, make the pasta the night before, let it cool after cooking and spray lightly with oil. Store in the fridge until you’re ready to assemble the salad. 

Mix all ingredients in a large bowl.
