Jello Flavored Popcorn

When I was a kid my mom would make yummy flavored popcorn balls. I was thinking about them today and decided it was time to make them for my kids.  I chose not to make them into balls, just loose, sort of like caramel corn. You can make it in any color and flavor, and you probably have all of the ingredients on hand!

You will need

8 cups popped popcorn (extra un-popped seeds removed)

1/4 cup margarine

3 tbsp corn syrup

1/2 cup sugar

1- 3 oz box of jello any flavor Not Sugar free

Preheat the oven to 300 degrees.  While preheating pop your popcorn.  If you are new to popping popcorn on the stovetop, give it a try, it is really easy!  Begin by pouring oil to cover the bottom of your pan.  Then cover the bottom of the pan in popcorn kernels.  Don’t over fill because the just won’t pop.  You want a thin, even layer.  Put a lid on the pan and set to medium high.

Once popped pour into a large bowl and measure out 8 cups for the recipe.  Add those 8 cups to another bowl that is large enough to mix the popcorn in without spilling over the sides.

Now that your popcorn is popped, line a cookie sheet or jelly roll pan with wax paper, parchment or foil.  Be sure to lightly spray.  I forgot this step and it made it hard to remove from the pan.  Set the pan aside.

In a small saucepan, add your margarine and corn syrup.  Over med head melt the margarine.  Once the margarine is melted, add your sugar and box of jello.  and stir well.  Increase heat to medium high and bring mixture to a boil stirring constantly.  Once it comes to a boil, decrease heat and allow mixture to simmer for 5 min, stirring constantly.  Remove from heat and stir into popcorn.  Act quickly, it hardens up fast!  Stir until evenly coated and pour onto your prepared cookie sheet.   If you wanted to form them into balls, simply do that now.  Otherwise, place cookie sheet in oven for 10 minutes.

Remove from heat and allow to cool.  Once it is cool enough to touch, break into pieces and store in an air tight container. I made mine for a summer pool party and chose lemon and fruit punch flavored.  It seemed summery and festive to me!  If you would like to make multiple colors, you will need to do the above steps for each flavor.

  1. You can use the microwave method to pop corn in a brown paper bag without oil for a no-fat, no-mess option.  I think you have a recipe for caramel corn where you do that….

    1/2 cup popcorn kernels
    Microwave for 5 minutes or so… MAKE SURE YOU LISTEN AND WHEN THE POPS SLOW TO 1-2 SECONDS BETWEEN, THEN STOP THE MICROWAVE!!!
